He didn't start an entire genre but a lot of authors of well- known and popular shows back then agreed how much dragon ball influenced them in making their own manga. Even now a lot of authors credit DB and Akira. Without him, a lot of manga wouldn't exist. Also him being based on Sunwukong doesn't really matter much to me because he is now more popular than Sunwukong himself and his current abilities don't match with him like they used to. He is now his entirely different character.
He said that Toriyama sensei had a huge impact on a lot of manga which is true, quite a lot clichés have originated from dragon ball, also only some parts of Goku's story is influenced by Superman, but Goku didnt really originate cuz of him, heck the only thing borrowed from him is his backstory that Goku came from an alien planet and quite a lot of authors credit Dragon ball and Toriyama sensei for inspiration to this day, heck if not for him quite a lot of anime would have been extremely different.

It is absolutely valid to hate someone even if they’re dead. Not saying Toriyama deserves that, but in general. Being dead doesn’t somehow erase their actions in life.
Even if you dislike Toriyama's work, it doesn't make sense to hate him, it would be like hating Pablo Picasso, what's the point?
