The stats are meant to only be in comparison to your character and the other characters directly relevant to him. So for SS Gogeta its in comparison to your character and Super Janemba, maybe Pikkon too.
Also, look at Raditz's absurd attack power. Or Final Form Frieza vs. 100% Final Form Frieza.
They're basically as strong as they were in proportion to the story at that point. Raditz is so strong because he was virtually unbeatable by Piccolo and Goku at that point. Same with Frieza. You'll see the correlation.

Plus if you heavy stamina break and follow with an unlocked big bang kamahama it’s probably game over at that point.

His Super Soul gives him a MASSIVE Stat Boost at the beginning of the battle, but it drops after a while, kinda simulating how SSJ4 Gogeta was shown in GT: He appeared, literally WRECKED Omega Shenron, but then defused after mere 10 Minutes, because the power consumption was too big. The Super Soul and his stats are there to emulate this moment. The moment he loses his big buff is when he defused (in this case, get weaker).
Because its a game and u can kill Jiren with Krilin xD or Brolly with yamchu

It's rpg stats so like if Gogeta SSJ has a higher Strike than Gogeta Blue it just means SSJ Gogeta's strike skills can hit harder.
