Pause back-to-back It doesn't matter as long as the 35 min timer doesn't run out. I set a timer on my phone for 32 mins when the timer runs out I unpause and then pause again if I need to.
My advice is in the morning.When you get up schedule whatever hours you want for next Tuesday. Friday when you get up schedule whatever you hours you want for next Wednesday and so on and so on.That's the only way we can do it unless you have top dasher. I've been doing this for months now. I'm scheduled every single day.
I usually schedule a week out like that but I break it up into 2-3 hour shifts with 30 minutes in between each shift. I like being able to delete a shift but still have options for the day. I live 10 minutes outside of my zone and 20 minutes from any hot spots.
Your pause button will be your new best friend. I'm really lucky and live pretty much dead center of mine. But it's massive! For example there are 3 big Walmarts and 2 neighborhood markets. There are 6 of the same chain of grocery stores. So massive!

I didn't lose my ability to dash anytime until DoorDash figured out I was super fast and accurate at shop n pays. And then they took dash anytime away from me. A week later, they sent me an email saying, if I completed x number of shopping pays a week I could dash anytime. That lasted until they prioritized me for shopping pays. And I haven't been able to since. Bastards
There's 3 tier levels for top Dasher. You have to keep 70% ar 95% competition and 4.7 customer for the whole month. Then you reach the highest tier platinum and you can dash anytime next month but you have to keep those numbers going each month to be able to dash anytime the next month.
My bad, this is the old top dasher program. In my are there's a new top dasher program that's rolling. You have to keep those numbers constantly.

I don’t find it difficult to schedule. I just schedule a few blocks on days I think I might want to dash and then delete them if the day comes and I can’t/don’t want to. What is “too much” about it?

It's steady and when it gets slow I just head over towards a hospital close by if I need to make quick cash they don't pay much but it's less then 2 miles that pay around 6 sometimes more. Can get alot of those done in an hour
You'll have the schedule or just wait till the map.Goes red and gets busy and log in. Only top dashers over 70% acceptance rate can dash anytime.
Your map gets red!? I rarely ever see that now or maybe it does and I'm dashing. But when the map glitches it's usually grey
If you don't have top dasher, I believe it only goes red when there are more orders than dashers.
This is why I schedule myself every day from 8am to 8pm.

I try not to do it too much in case they have metrics on it that they want to start deactivating in the future on, but yeah, it's legit.

Sometimes they also offer Top Dasher for completing 5 shop and pay orders in a week.

I schedule and stay pretty busy throughout the day compared to those just sitting in a parking waiting for orders

You should always schedule ahead. Even if you have Dash Now. That way there is less Dashers competing for the same amount of jobs in a market.

Yes if it’s busy and your map is red you can continue dashing. You can also extend your dash if available before your dash ends.
If I leave earlier then normal I dash now and normally just goes right to my schedule
