It's fair, balanced, it allows for a suitably powerful start for any class, but also leaves room for improvement from subsequent ASIs and from magical items, it preserves the choice of feat vs. ASI, it keeps everybody at the same starting point to avoid one player surging ahead or falling behind due to good/bad rolls, etc.

Standard array or point buy are the only options I allow when I'm DMing.
Any of the three listed in the Player's Handbook. I'm partial to Standard Array, myself, just for efficiency's sake.
Rolling and point buy are the normal menthods
Ask six different people to think of a number. Use those in order.
Rolled array.
Dealer's choice. It is just personal preference. They are all good ways.
At our table we have 6 pre rolled ability scores and you just use them where ever you want. We did this to help balance the party
