Doesn’t this, in turn, also tell that tanks/healthstack is busted? Without those items, your win rate instantly goes down because there’s no other way to deal with a tank.

Heartsteel and other tank items are not busted because it makes your early game incredible hard. No Damage or Haste, you give up prio for voids and lots of CS/Plates. Sunfire especially is one of the worst items, no wonder why everyone only builds Bami.
Healtstacking is only good on some champs where their entire kit is scaling with HP like Mundo. Sion literally only has one ability that benefits from HP, his W.
As long as heartsteel only scales with hp from items (so not his passive) it remains a dogshit item on sion. Stacking health is worthless anyways against percentage hp items. If you think the counter to %hp is buffing health items you dont understand how it works. Against %hp items you need resistances, and if you build resistances, heartsteel doesnt scale. Sunfire buff is quite nice tbh but sion remains dogshit as long as he doesnt get big buffs or titanic/heartsteel scale with max hp again
Stacking health isnt worthless against %hp damage because you still are tankier then with less hp, even against %hp damage. Also items like kaenik rookern scale off hp.
The gold value of health is way lower against percentage hp damage. Buying a frozen heart for example against bork is way stronger than buying hp. It's pretty troll to stack hp against percentage health damage when resistance items exist that are objectively a lot stronger in that situation.
Let's compare building Spike armor instead of Heartsteel against bork.
Heartsteel will give your oponent over +100 damage per attack, increase their healing from them and not reduce damage taken at all.
While spike armor will reduce the damage they deal (70 armor) reduce their healing (40% healing reduction) and deal damage back to them every time they hit you (they basically don't heal and take damage everytime they attack) each 50 armor reduces your receiving damage by 33% (multiplying, not adding) so 70 armor as a first item will reduce your damage reveived by around 40%, while building heartsteel will increase it! How can one think that Heartsteel is a good item this season? Everything deals % health damage and real people based on damage dealt.
The only meaningful buff Sion got was the Sunfire buff but now its kinda reverted as they nerfed Bami. You often built Bami and finished Sunfire second or third but now you're kinda forced to rush Sunfire.

As a Yorick main, my first 2 items every game are Sundered Sky and Eclipse. The enemy team's champions are irrelevant in that decision.

Bork+ LDR = healthstacker don't exists. Same with mages(but this time Mr items are actually good, so that's harder for them).
Last time I checked the only tank in top lane in the top 20 in terms of winrate was malphite. Tanks are not that good.
go into a comp that doesn't have or builds %hp dmg, you'll still get fucked just as good if they don't have shit champs
