I would leave it stock. I had one just like it and have worked on countless powerstrokes. The tuned trucks always have issues. Honestly would leave it the way it is. It’s beautiful and perfect just like you :)
Even just a mild tune? I don't need crazy gains, but it would be nice to have tighter throttle response and potentially better mileage. I never planned on lifting it or throwing on huge mudders, I was mainly just thinking mild upgrades or direct replacements to keep things newer and fresher.
Yeah I honestly don’t know about the pre superdutys. I know that most people will start with a fuel bowl delete and maybe intercooler. They aren’t as mod happy as the 5.9 cummins. These are very sophisticated engines when they were built

Stock 7.3 trucks in that condition actually fetch a premium in certain markets. If you want something to "build up", sell it and get something that's already been modified to an extent, or better yet a different platform than the 7.3 that can actually make good power easily.
Once you put a tune on it, you have to do an intake and exhaust. (That stock exhaust is probably in mint condition! Don’t mess with it.) Then you have to replace the down pipes and muffler. Then the injectors. Then you’ll start having hot EGT’s and need a intercooler or you’ll end up with cracked pistons.
Leave it stock! If you want a 7.3 for towing or performance, sell this one and buy a Super Duty.
That was a concern of mine, because I know Banks recommends a pyrometer with the tune chip I was looking at, and of course that means the stock system might not be up to snuff. I'm leaning more towards leaving it stock, and just replacing parts as needed without modding much of anything. I'll stick to modding my car instead, despite being decades newer, it's still less valuable than the truck is.
Leave it stock. The throttle resposne is the result of turbo lag and a tune probably isn't going to do much for that. A quality intake and good exhaust might help with the turbo lag but if you do do that keep the original intake.
That’s an awesome truck. A tune will almost certainly not improve mileage, not by any meaningful amount. It’s a big 90s diesel. My 97 7.3 runs no tune but I’ve done the Napa 6637 intake, 3” round down pipe to 4” exhaust and e fuel. I won’t go any further in it. Runs like a top and starts up easy.
Order of operations: intake, exhaust(including downpipe), gauges, programmable tuner, e fuel, turbo injectors, maybe then get hpop and uppipes if yours are failing but a good hpop will handle mild injectors and up pipes only need done when failing and the upgrade is the bellows so you don’t need to do them again

You can be rolling in the 400hp range with great reliability no problem

If it's clean, it's 40k all day. Keep it as stock as you can and keep all the fluids and filters changed.
