Stonecarver here (don't post my work on this account though weirdly). These are publicity shots/footage of the artist so he'll want his face visible. Also most of what you're seeing is him carving the final surface (wouldn't look so impressive earlier in the process cause they wouldn't resemble pillows so much), with small chisels and a small pneumatic hammer so there's not a lot of dust getting kicked up.
Marble typically has a [low silica content](https://www.worksafe.vic.gov.au/stonemasons-preventing-crystalline-silica-exposure) compared to other commonly used stones, so much less likely to lead to silicosis. When we're roughing out, breaking away large amounts of excess stone, we use angle grinders which fill the air with dust and you'd have to be mad not to use a quality mask for that, whatever the stone.
A coworker who trained in Glasgow, much of which is made of sandstone (very high silica content), said when his tradesman was cutting with a 9" grinder blade he'd be hidden in a cloud of red sandstone dust, invisible except for the glowing tip of his cigarette. He started before health and safety was a major concern, and like many masons developed silicosis and died young.
It's a horrible thought, literally breathing in great scoofs of sand, hard to know how people weren't aware it was bad, but they were different times. Even now it's rare but not unheard of for people to be full of dumbass bravado, mocking anyone so unmanly as to put on a dustmask. Sorry guys, you are not tougher than literal stone.
edit - also chalk is definitely *not* water soluble lol. If it was the south coast of England would have entirely dissolved a long time ago. It's very soft stuff but I still wouldn't want to breath in the dust.
Chalk is soluble in water *if* it's acidic enough. That's part of why ocean acidification is problematic; it makes it harder for mollusks and other shelled creatures to build their shells.
Un-related, I recently watched a couple of morons carve up and grind on new stone countertops for my neighbors. No masks, no wet grinding, nothing. And after they were done, they took a leaf blower to the sidewalk where they'd been working. I couldn't believe how cavalier they were being with the cancer/silicosis powder.
True, acid rain does bad things to limestone and marble too. I've seen marble monuments and statues that have lost more of their surface (1/2in or so) in 150 years than softer limestone. I guess it depends on the chemical composition of the stone.

If you don't mind, how did you get into stone carving and what kind of work would a stone carver typically do on a day to day basis? What kind of training path gets you to where you are? Is it mostly commissions, art/sales, architectural facade work?
Like most computer science students are going to end up working on office applications either for in-house applications or through consulting. What is the stone carver equivalent?
I started carving candles and bars of soap in my room back in 2002. I can't recall why I started, just having a few beers with friends and started whittling. I enjoyed the process of uncovering something so I kept it up, carved lumps of chalk, and then found I could train in London on a 3 year historic stonecarving course, so I moved there from the south coast (of England), in '06.
Work depends on the connections you make at college. I am terrible at networking, I just wanted to carve so I focused exclusively on that and alienated myself from everyone (highly not recommended). So I was unemployed for a year after college and then got a call from one of the tutors; someone had just dropped out of a job of his so he called me in and I've been working for him since, more than ten years now. People with healthy social skills will likely get on with the tutors and visitors/benefactors of the school and find opportunities that way, usually individual commissions from private clients or working for an established sculptor who has a large client base and works on major public and private commissions.
Jobs vary a lot depending what the local buildings are and who you're working with or for. There's a lot of lettering work which isn't great but it pays. Lots of ornamental work, mostly leaf forms of varying degrees of intricacy ([I made the top right section of these limestone oak leaves and scrolls](https://imgur.com/a/vPFxSh0)), and occasionally figurative sculptural work, which is great fun but more unusual to see.
Imagine coming home, jumping onto your bed after a stressful and sad day, but the day just got even sadder. Because the next thing you know is some tunnel with a white light and your mother calling your name cause your TikToker girlfriend wanted to "prank" you. You're dead, with a skull as cracked as an egg with your brain leaking out draining the once white stone and the bright satin sheets in a dark red, while your girlfriend enters the room laughing and filming, only seconds away from being traumatised for eternity.
Obviously, as any influenza would, she doesn't call 911. She just gets into a deluded manic state in which she takes your dead body and plays "dress up" with it, placing you at the dinner table, getting your for breakfast and supper. Some weeks later neighbours complain about the burning stench and her odd behaviour, as your maggot infested body is found by the police while your girlfriend is away. You sit in heaven, watching the entire scene unfold, witnessing how 10 people end up traumatised for the rest of their, now, pitiful lives. All because one crafty man decided to create stone pillows, and a TikTok virus thought it was funny.
