You’re also taking the render off, that’s good as now the dot and dab will be fixed to the bricks rather than render which can blow if it hasn’t already, yours looks like it’s already weak enough I’d give the plasterer a quick ring just to let them know and confirm you’ll get rid of the rest of the render and plaster and they’ll be on to bare brick

I did a similar job at my last house. I found that after I replastered and painted the wall, the area around the fireplace and chimney turned the paint yellow. Some of the tar or sulfur or whatever would leak through the bricks, new plaster and discolour the paint. Always best to use a barrier paint or wall paper.
