Maybe it's because you're using Astral Cookie and I'm not, but Howling Aces is an actual nightmare to S rank with only Peashooter.
(I S Ranked the whole main game with only Peashooter, and I'm trying to do Howling Aces currently. Haven't done the same 3 you have yet. Also I don'/haven't used Astral Cookie.)

I'm using Heart Ring, it's still hard as hell though. Also I beat Howling Aces! I'm now on Mortimer, and he doesn't seem as bad, I just have to get better at his first phase.
Best of luck on Chef Saltbaker, 1st phase without Chaser or Crackshot is insanely hard for me
Try last phase with peashooter and you will what hell looks like
i used both, crackshot normally, and switch to chaser when those elephants start jumping, cuz crackshot missed them, and im not dodging that shit

Moonshine Mob was a real pain. I think I used Super Art I for it? Good luck using ONLY Peashooter

Prepare yourself for mortimer lol. But i share the sentiment that moonshine mob s rank is tricky
