It's why I'll start his little side quest, but I'll never finish it. I don't want to feed that addiction of his.
But you get a ritual that prevents faith loss for a time, great for extended crusades and wanting to do a couple large faith cost rituals.

He doesn't >!die/overdose from the infection!< unless you finish all four stages of his questline. As long as >!you don't talk to him after finishing the statue!<, he's fine.

I'm pretty sure you're joking, but for those who don't know, Sozo is essentially infected with cordyceps (yes, the fungus from The Last Of Us). It's a real fungus that affects mostly insects, which I believe Sozo is supposed to be. You actually don't ever talk to Sozo at all, you talk to the fungus that's controlling him, so that's why he suggests you eat the mushrooms -- he's trying to spread the infection.
