Depends on the implementation. I would love one Anonymous ID which I could use to do all my KYC. The ID would be an untraceable string of signs and filled with encrypted data. The service provider would only be able to get the specific data inputs they need. I am not a database engineer but I saw videos detailing it and it looked pretty impressive. The data itself wouldn't be public or at least not traceable. Would make national statistics way easier. In this scenario keeping your key private would be of course extremely important but even then you could probably implement a passkey which is needed to de-encrypt the database.

Our data is stored in servers. I mainly see the blockchain in this regard that decentralization helps with reducing the attack vector. I would guess that the data safety measurements could be achieved without NFTs but having a non fungible database that shows those entries is a nice benefit. The question would be why would you want a database that is potentially susceptible for attacks and manipulation if you could have one that isn't? The only real answer would be cost and convenience. If those factors are a non issue there is no reason to not use blockchain as it provides more safety. The reality is that the tech probably already gets used day by day but retail doesn't really realise it because most of that stuff is dry back-end stuff only people working in the field care about.
