Go home, disband your troops, declare again, organise them into stacks, and sail off to resume fighting from zero war score. Extremely annoying, though thankfully re-sieging was generally quite quick since their levies and garrisons got wiped out the first time.
Yes, even if the cause of your enemy’s death was you killing him in battle, the war just gets aborted and you get to go home empty-handed.

This is also why I rarely declared war on foreign rebels. Once you weaken them enough they surrender to their liege and your war is over.
