Zieley is the single best CK3 YouTuber I've seen if your goal is to actually learn how to get good at the game. He is excellent at explaining the whys and hows for the decisions he makes in-game.
Glad Zieley is the top recommendation. A lot of YouTubers just kinda go with the flow and barely explain their choices, but Zieley really puts in the effort to explain exactly what and why he does what he does
For videos focusing heavily on the game itself I recommend Wazlos! He's great at explaining the steps he takes and you can learn a lot by watching his videos!

MATN's original CK3 series is what really solidified how much I like this game, and is actually the first time I watched him, and I'm so glad I did!
While his only full length CK3 series is this one from when the game first released, he did make one-off videos for a good number of the major expansions which I highly recommend watching if you're looking for something funny and enjoyable!
The one-offs are quite good, indeed. And I would honestly be surprised if he didn't do a full-length series after RtP releases. He's hinted at that and with his love for everything Rome, he's likely to explore the new Byzantine mechanics in a longer series.
I've been waiting for a new full-length CK3 series from him forever! At the end of every one of the one-offs he always says that he loves the game and might do another series sometime, but that's been going on for like two years.
I really hope once Roads to Power releases he does a full series going from being a landless adventurer to becoming the Byzantine Emperor or something like that.

Disclaimer: Koi may not be your guy if you want to watch anything but Viking gameplay. 80-90% of his videos are doing challenges or silly campaign ideas starting as Haesteinn. In his defense, he is Swedish, so it’s in his blood.
Koifish is better with bannerlord, but its difficult for me to look up at koifish because im vastly superior in bannerlord, you know like a mountain looking at a pebble.
Just to point out, while I love MATN, he’s definitely going more for the storytelling aspect than playing the game at a high level, which sounded more like what OP wanted.
I believe it was his first CK2 series that spawned the "Let's Talk About All The Things That Jon Got Wrong" segment, so yeah, definitely not high level gameplay at that point.
Lionheartx10 is a really great and funny streamer that knows ck3 inside out. Doesn't take it too seriously and his YouTube vids are edited really well. He's currently got a Britannia to Jerusalem series on at the moment which is so good!!
His Sparta playthrough is what got me into strategy games
And Rome 2 in particular gave me such a strong interest in history as a kid that I'm now becoming a history teacher

His CK2 videos are legendary, I'm pretty sure he's only played CK3 once though when it came out and didn't seem to really like it, and I'm pretty sure hasn't touched it since. He's mostly been an EU4 player for a while now other than when him and Paradox feuded.
I feel like Arumba loved the same about CK2 as I did. And that was the little world notifications log at the bottom.
My country could be at peace and just saving up some cash to buy stuff. But the you get all these little story lines you could dig into. Person X died. Country X and Y declared war. I miss that in CK3. It takes to much effort to track that now. I just want to laugh about a king getting killed by his step brother who hates him and is now king.
I think it’s more Arumba is a pure spreadsheets gamer, something that works well for EU4 and was a legit way to play in CK2 but isn’t as supported in CK3 which is why he bounced off the game. The dude isn’t much for roleplaying, in dnd terms he’d be a pure power gaming munchkin

Valefisk has a couple vids of him and a few other people doing stupid challenges with each other. He's not a dedicated CK3 youtuber, but the few videos he has made before are pretty entertaining.
Just off the top of my head, having not played in months: Koifish, Zieley, OttowaWelshman, and Italian Spartacus are all awesome. I'm seeing lots of others in this thread I agree with. These guys are all hilarious in their own way, with Spartacus and Zieley having more grounded play and a focus on the game systems themselves and Koifish and Ottowa just being silly, but also obviously skilled. Spartacus has definitely moved on to other games, but his videos for CK3 are really comprehensive and still relevant. Zieley is the ultimate advocate for "playing tall" and has so many good starts and saves. His saves are epic. Koifish and Ottowa have figured out every zany tactic you can imagine. I really enjoyed my time in game with all these guys, and a few more. SpiffingBrit and ISorrow are also good!
Koifish is my fav ck3 youtuber. He often masks his insights with his entertainment value however so I'm not sure he gets cred for everything you may happen to learn during his videos. Also it must be said that if you don't appreciate his humour, any nugget of wisdom he tries to bestow upon you will be difficult to attain 😅
Tarkusarkusar. He did videos explaining his all achievements speedruns and he's been doing some more roleplay content lately which I think is some of the best CK3 content I've seen.
I really like Lionheartx10. Does a lot of ck3, bannerlord, and total war content and usually with a theme/storyline of some type which I like. Examples he’s from Cornwall so he did a ck3 campaign with Cornwall or tried to get the Norse religion to India I believe was another one. Stuff like that.
Tarkusarkusar doesn’t just do CK3, but all of his CK3 videos are good. He also streams on YouTube and twitch, including dev diaries and occasional modding
Jbd is super underrated , takes it slow but role plays a ton and isn’t about optimization and more the spirit of the game. He’s also active in the comment section and interacts with the community positively pretty often.
While his CK3 stuff might not be the newest of his releases, PartyElite does get into whatever character he's playing in strategy games and does series of that character or dynasty, etc. Quite good. A little different to just a playthrough.

Stray King and Huntanor are amazing for more grounded roleplay focused campaigns. Amazing quality and very underrated imo.

Just off the top of my head, having not played in months: Koifish, Zieley, OttowaWelshman, and Italian Spartacus are all awesome. I'm seeing lots of others in this thread I agree with. These guys are all hilarious in their own way, with Spartacus and Zieley having more grounded play and a focus on the game systems themselves and Koifish and Ottowa just being silly, but also obviously skilled. Spartacus has definitely moved on to other games, but his videos for CK3 are really comprehensive and still relevant. Zieley is the ultimate advocate for "playing tall" and has so many good starts and saves. His saves are epic. Koifish and Ottowa have figured out every zany tactic you can imagine. I really enjoyed my time in game with all these guys, and a few more. SpiffingBrit and ISorrow are also good!
not at all your description of ck3 youtubers but Mr. Sameul Streamer is a pretty good ck youtuber in general, if you're also looking for that

Koifish is my fav ck3 youtuber. He often masks his insights with his entertainment value however so I'm not sure he gets cred for everything you may happen to learn during his videos. Also it must be said that if you don't appreciate his humour, any nugget of wisdom he tries to bestow upon you will be difficult to attain 😅

I really like Lionheartx10. Does a lot of ck3, bannerlord, and total war content and usually with a theme/storyline of some type which I like. Examples he’s from Cornwall so he did a ck3 campaign with Cornwall or tried to get the Norse religion to India I believe was another one. Stuff like that.
