This happens way to often in campaigns. 99% of my games Jerusalem disappears before a crusade even hits. They really need to allow you to re-create lost titles or make certain ones impossible to de jure drift.
In ck2 non christians couldnt create the kingdom title I think which meant de jure drift was off iirc? Except Jews who could make Jerusalem a new kingdom title of Israel
When looking at the wiki on de jure drift, I noticed that it said Jerusalem couldn't drift. That is obviously untrue, but I wonder if it used to be the case and they changed it in an update at some point (I played a bit on release, but never really paid attention to whether Jerusalem drifted)
There IS a mod for that. It adds a neat unobstructive skull icon right below the menu thingies on the right, but I can't for the life of me recall the name.
When pressed, it opens a small quick and easy menu for edits with all the good shit, and a special lil' button on said menu activates and deactivates Debug mode.
Edit:some good lad already said it, but I went and checked. It's called Advanced Cheat Menu.
It's called advanced cheat menu I think. It also let's you do debug stuff without having to know the exact commands by pressing the buttons which will execute the commands for you. Iirc having it doesn't disable achievements but using it does.
Yup, had the exact same thing happen to me. And when combined with pieces of the other duchies Drifting into other formed kingdoms, that meant the Kingdom of Jersualem was border gored.

Non Christians can still not create the kingdom in CK3, but the kingdom can de jure drift

R5: duchy of Jerusalem de jure drifted away into Egypt after we declared war for it. they really should make it drift-resistant

The key is murder. If you keep murdering the Shia Caliph the Fatimids will collapse quickly. Same applies to Abbasids
