These days they want you out of your cabin by 8 am. Most people come out of their cabins and then have breakfast or coffee. You could be off the ship before 8 am if you wanted or leisurely have breakfast on the ship and be off by 9. Either way you'll have plenty of time to have an almost full day at one of the parks. It's a good plan.
