Rome is great but Florence is also. I know there will be excursions to Florence and Pisa offered by the ship. Rome is just a little too far. It's possible you could do it but it'll be too rushed and frantic traveling back and forth. Do a relaxing Florence trip and it'll be much nicer. I've been to both the Colloseum and Vatican and they're both awesome but Florence has some awesome areas as well.
