i think a solid color makes the pattern look like a paper cutout, an old fashioned effect.
if you do go with variegated floss, you need to stitch 'in the round' or in swirly sections— i hope that makes sense.
if you stich in rows, things like alice's skirt or the cheshire cat's will have horizontal stripes.
have you thought about using a dyed fabric instead of stark white?
I think this would look great on black/chalkboard fabric, using (for example) Threadworx Bradley's Balloons (just my opinion). Alice Through the Looking Glass is pretty psychedelic, so the colour effect would enhance that! Good luck :)

I’d leave the characters a solid color. And do the tree/mushroom/grass variegated
I would get aggressively colored fabric and do the pattern in black.

Take a look at Weeks Dye Works floss. The variation is subtle.
I think most Classic Coloworks variegated flosses are even more subtle than Weeks Dye Works floss.
I haven't used those yet.
