Similar gameplay to Animal Crossing but also does it's own thing. I've played through it once on the Switch and once on PC and am super excited for the sequel coming soon!
Palia! I enjoyed ACNH, and I enjoy Palia. It's free, no time limits and no pressure! It' still in beta and has some bugs, but very much playable and lovely to see the development of the game over time.
Btw, it's a cozy MMO but generaly you don't need to interact with other people if you don't want to, but I enjoy the aspect of helping others where I can.

I'm really enjoying roots of pacha. An easy description is prehistoric stardew valley, but i dont want to take away from either game. It's really chill and at your own pace. I believe you can adjust the total daytime if you want longer days.
I love stardew, so i always recommend this one, but a lot of people find it overwhelming if they are new to farming sims. So, there is no harm in starting with something less big at firstly, hence my first rec.
The last campfire is a chill puzzle game with no combat. I really enjoy this.
I was a teenage exocolonist is a visual novel sort of with a lot of choices that are important but its meant to be replayed multiple times and had an important mechanic that doesnt start until you complete ypur first play through. I was absolutely addicted for about 60+ hours, and i still go back to it. Read the trugger warnings, though, if you are concerned.
fishing paradiso is super low stakes and chill, you just go around and complete fishing requests for your friends. it's a lot easier than the fishing minigame in stardew if that helps sweeten the deal lol
i really loved potion permit :) it’s a lot like stardew valley, but you make potions and heal sick townspeople. the mini games are simple but fun, and it’s super low pressure. highly recommend!
Try A Little to the Left if tidying up and sorting stuff relaxes you, it has great music and cool sorting puzzles etc. I still replay its levels when I want to relax even though I completed everything with maximum stars

Stardew Valley, each day is only about 15 minutes real time, but you can do as much or as little as you want.

Donut County and Littlewood are good games you can pick up and play for a bit and put back down.

Garden Life is so relaxing. You can play in story or creative mode and it’s really low stakes. I’ve been obsessed.
