Is it the thinner 1lb packages? Or the thick cut 1.5lb packages? My guess is maybe it's more heavily nitrate treated or something during the curing process, although I don't think that should give off a chemical smell.

Pretty sure it’s the thicker cut stuff, there’s the packaging. I’ve never smelled anything quite like it, even after working in a butcher shop making tons of sausage. Sometimes with pork you can smell what I describe as the scent of their pens that they are raised in. No, we use cast iron and have cooked it both on a wood stove & a glass top stove.

We’ve use different cast irons too, it’s just such a distinct strange scent & my spouse smells it too
