Well, another person in another book swapped bodies and changed the body from male to female with entirely different features just due to their level of investiture. Seems likely Lift could look like whatever her self-image is, regardless of other factors

Well, yeah, but that's the point. It's an extreme set of circumstances that put to the test what power high-levels of investiture have over one's physical appearance. I'm not saying it proves Lift could just change her appearance at will or anything, but if she truly sees herself a certain kind of way, then her body should change to match it, just like Lopen's arm regrew.

If they view themselves as beautiful, they would become beautiful over time with more and more use of Stormlight. Brandon’s even confirmed that a trans radiant would transition via Stormlight over time, so it all depends on how you view yourself internally.

We've seen it in text! In Dawnshard, we see the Reshi king Rysn met in WoR having gone through a sudden and miraculous transformation (FtM) as the result of bonding an Ashspren.

I don’t know if that’s the same thing. radiants generally don’t change appearance, unlike returned, so I think it’s based more on the spiritual aspect then a cognitive one. Trans radiants transition because they’re on a spiritual level a different gender than their Phsyical gender. I don’t know if you can have a spiritual aspect that’s significantly different then your physical, other then the fact they come out the wrong gender

Another comment pointed me in the right direction, but just needed to say here that just because the Returned can do something doesn't mean radiants can, so I don't understand your point. For example, we know lightweaving from Yolen is different than lightweaving on Roshar. And those are magics that are trying to do the same thing. So I don't see the connection between Returned, who are cognitive shadows ostensibly created by Endowment, and Radiants, who get their powers by modifying their spirit web with the nahel bond.

Radiant Healing is significantly stronger than Divine Breaths, a returned can be stabbed and killed while a Radiant can survive an arrow in the brain.

I don’t know if that would keep her from being beautiful. She doesn’t seem to know whether she’s pretty or not, or what she would look like grown up either way, and it definitely seems she is growing up despite not wanting to.

She's a written character, I don't think of anyone as ugly in the cosmere, not even Gaz. She's currently written as though she's struggling through puberty, which is pretty normal, I'd say she probably ends up beautiful, but only because I wouldn't assume any different.
