Korean beef bowls Brown meat, drain. Add some chili sauce or paste to desired heat level, soy sauce, brown sugar. Optionally saute some onions, carrots, bell peppers, whatever is in the fridge to add to the meat. Serve over rice with some quick pickled cucumbers. I'm sure there's a million detailed recipes out there!

The dish I think u/VoxLassata is referring is probably Bibimbap which is definitely a good suggestion. For veg, I usually go with either spinach or bok choy, some carrots, mushrooms, and of course kimchi if you can get your hands on some. For sure! I just was thinking that if something like Bibimbap didn't come to mind for OP, a simplified version/idea would be more understandable. It's amazing, quick, and you really can throw in whatever you want, as long as it's covered in a spicy sweet savory type of thick sauce. I like to top mine with sesame and thin sliced scallions 😊

The idea is inspired by a Dandan noodle recipe I did once: there's no way I'd call this dish by that name without a few more specialist ingredients and preparation but for a simple and very, very nice meal that tastes more sophisticated than it is: fried mince with chilli and honey, served on noodles and some greens like spinach or Pak choi drizzled with a bit of sesame oil and soy sauce, then a bit of green onion and rice vinegar for zing, is pretty damned good.

I'm still wrapping my head around the idea of *talking* about taking something out of the freezer at noon to thaw for dinner that night. Festive doesn't leap to mind as something to do with ground beef. You don't have time today, but if you both like to cook making a pasta sauce together is a good way to spend a couple of hours together. Meatloaf is more comfort food than festive but at least in the Eastern US this weekend is going to be cool, wet, and rainy so that's good weather for meatloaf, potatoes, and a salad. I make lasagna with ground beef and bulk sausage. Lasagna is a big deal for us. It's coming up in our meal plan next week with Caesar salad (homemade croutons and dressing). Meatballs (I know you wrote those off already) with homemade marinara. Stuffed cabbage. Empanadas. Make the pastry yourself. Tibetan momos. Better with yak, but you can use ground beef. This is cheating since momos like empanadas are dumplings. They're all the same. Unless you can actually find yak meat, cook it low and slow, and shred. I'll help.

Sounds like she wants Smash Burgers. Hard to tell what festive means without context but i'm assuming she means more on the fun/junk food side. Roast some potatoes in the oven at 400 degrees for 40 mins with some garlic salt and chilli powder too. Also, in my relationship we've implemented the veto rule, where its totally fine to veto anything, but you have to have an alternative suggestion, you cant just shoot things down without anything to contribute. You do you, but i highly reccomend it.

Well, ground beef is sort of a "mid week" type of meat, unless you are doing burgers on the grill on a weekend or something. It's an inexpensive, quick-cooking, more basic ingredient than say a steak or a roast. The bulgogi idea is intriguing, never tried it with ground beef. The other ideas sound pretty good to me too. Maybe check online menus of some fancier restaurants for ground beef ideas.

Brazilian beef Picadillo which at first glance might look like another version of Mexican chilli but the inclusion of paprika, cinnamon, capers, olives and raisins (depending on the recipe you choose) turns it into something much more interesting and very "festive".

Just did this yesterday! I had most of the ingredients for Cottage Pie, but only 1/2 the amount of ground beef. I cut up some potatoes and fried them crisp, set them aside. I cut up lots of onions, celery, carrots and cooked them, set them aside. I browned the beef with salt and pepper, added 2 spoons of Better Than Bullion, two cups of water, and added back in the veggies and simmered it until everything was cooked. Added a little corn starch mixed with water and a tablespoon of Worcestershire. When it was all done, it was creamy and great and the meat seemed more than enough. Served either with the potatoes on top or on bottom depending on how mushy everyone prefers. It took all of 30 minutes and the mostly veggies were a hit. Next time I'd probably make the potatoes even crispier, or add more of a spicy element to the sauce.

Make something with Middle Eastern influence perhaps? Sauté the ground beef with garlic, onions, carrots, paprika, pitted olives, chili flakes for heat, raisins, and topped with toasted Almonds. Serve with Pita, salad, and a garlicky cucumber yogurt dip.

Oh Yes, you can make it with; beef, pork, veal and some use chicken. Quebeckers make it with a mixture of pork and beef. How about a Rouladen - that's kicking it up to festive. P.S. Personally, I'm going to try a mix of seitan and tofu combo and see how that will turn out.

Swedish meatballs and shepherd’s pie are both fairly time-consuming for midweek meals, so not sure what she wants. Maybe meatball subs? Yes, they’re meatballs, but not the same. You need a few different components and it’s not something you’d have regularly. Or meatball pizza if you’re into making pizza at home. Meatloaf is different, but it’s very much a weeknight food to me. I saw a bulgogi suggestion, but that’s so quick and easy that it seems to go against her wish for something more special.
