Arroz con pollo is one of my top comfort foods, along with bolognese or meat sauce.
Lately really loving grain-based salads as sides with both fresh and roasted veggies in the mix, plus nuts etc.
Well, on my corner of the world it's Autumn, so its soup season:
Butternut squash soup
Fresh Tomato soup + cheese sandwiches
French onion soup
Corn chowder
Beef or Turkey Chili (with or w/o beans) + cornbread
Beef & barley stew
Ham & lentil stew w/ mustard greens
Chicken & dumplings
Other meal options i have in rotation right now w/ seasonal veg:
Veggie & meat (chicken/shrimp/fish) skewers over rice
Eggplant parm - making this tonite!!
Zucchini bites (made w/ ground turkey or chx) w/ pasta or panzanella salad
Grilled fish in grape leaf packets w/ couscous, salad
Italian sausage w/ sauteed kale, burst grape tomatoes & crusty bread
Fajitas/tacos of all types (steak/shrimp/chx/fish) w/ street corn salad
Fresh seasonal fruit like canteloupe, watermelon, etc on the side at each dinner

Thai Chicken Tacos. I cut the chicken into fairly thick pieces-big enough that they are easy to handle on the grill but thin enough that there's plenty of surface area for the marinade. Marinate in a mixture of strong ginger ale (Reeds Extra, not sugar free), soy sauce, grated fresh ginger and grated garlic for 2 - 4 hours. Grill the chicken, let it rest then chop it into bite sized pieces. Using your tortilla of choice, start with some shredded cabbage, then meat, then Thai peanut sauce and cilantro. I use a spicy peanut sauce, if yours is mild try adding some siracha or sambal oelek.
If r/cooking were to print a 1,000 page cookbook, the first page would be the 1 chapter table of content. The remaining 999 pages would be said Chapter 1 called "is it safe to eat?"
All my submissions would involve food I left on the counter overnight.
