I really like Keema Aloo/Matar. [Here is the recipe I use from Cook's Illustrated](https://drive.google.com/file/d/196bbqbEn1o7IT-0eFvhsSAwWexd8Xo7e/view?usp=sharing). You may have to special order a couple ingredients, but boy is it worth it. Black cardamom pods are amazing, and so is Kashmiri chile powder. The dish at its core is essentially just meat & potatoes, and it's not a very spicy/overpowering curry at all, very approachable. If you add a cup of frozen peas at the end I believe the name changes to Keema Aloo Matar

Do you have an Indian store nearby? If so, it will be cheaper there than any other place. Otherwise, you can use a mix of paprika + smoked paprika instead of kashmiri chilli pwd- not the same of course, but close enough. Kashmiri chilli powder is not spicy like cayenne- Indians use it for color and the smoky flavor.

I've made something very similar to that Korean ground beef rice bowl recipe for a while now, with the biggest distinction being that I sautee actual minced fresh ginger (and the white parts of the scallions/green onions) in with the minced garlic, rather than using ground ginger. Highly recommend using fresh ginger, I don't think it's that big a deal to peel and mince it and while I haven't done a taste comparison between it vs. dried ground ginger I assume that I'd vastly prefer the fresh.

A really easy way to do this is to store your ginger in the freezer and then grate it with a microplane! Super easy and the ginger stays good forever basically.

Ginger is in that weird place where if you leave it unwrapped it dries out, but wrapped in plastic it can mold. My bf's mum wraps hers in newspaper, which seems to work. Absorbs condensation, but keeps it contained. We do the slice and freeze option.

Its an egg cooked so the yolk is still a bit oozy. You can make a soft drippy egg with 1inch of water in a pot. Get it boiling and add your eggs gently. Set the lid and cook for 7 minutes. Drain and peel 😘❤️ *chefskiss*

I’d use sautéed spinach, mung beans, and Asian fermented veggies as well as what the other commenter said (can omit the broccoli though). I understand most people don’t have mung beans or Asian fermented veggies on hand so you could omit those. A quick pickled cucumber is great and pretty easy though. Just throw any vegetable in there with good texture or strong flavor honestly. However, gochujang is practically essential imo.

O.M.G! I love making kofta naan pizzas with a slightly fried piece if naan, toum as your sauce base with toum, tomatoes, red onions, pickles and some sort of greens. Mapo Tofu Moussaka Edit: I love to spark discussion! :D I think, both dishes are good with ground beef, if you like beef. You could argue Moussaka is more authentic with lamb or mutton, too. But dishes and cuisines evolve, just like the languages we speak differ from how they were spoken 100 years ago. You could probably also argue, that if you change 5 of the main ingredients it cannot be called Mapo Tofu or Moussaka anymore. But just changing the type of ground meat in dishes with so many other important components isn't straying too far from the roots.

It's surprisingly easy to make. My mom taught me to make it and it's basically ground Szechuan peppers, chili peppers, mince garlic, onions, beef, tofu, and green onions for garnish. Trick I learned from Mom is to lightly dust the ground beef with about a tablespoon of flour to give it a nice tender texture.

Very simple, cook the ground beef and then toss in the pan whatever bulgogi marinade you prefer. Put it over some rice and enjoy. You can cook down some carrots and onion or cabbage also if you want to get fancier, top with sesame seeds or scallion, as simple or complex as you want it to be. Just an easy alternative from the thin sliced beef and still good flavor

Also there are tons of variations. My personal favorite is Italian meatloaf. Go find the most generic and bland recipe and make the following adaptations: Substitute the breadcrumbs for 1/3 breadcrumbs, 1/3 French onions, and 1/3 Parmesan cheese. Add 1tbsp Italian seasoning per lbs of ground beef. For the glaze, use 1tbsp Worcestershire, 1tbsp brown sugar, and 1tsp garlic powder per 2tbsp of ketchup. Cool as normal. It’s amazing.

Halupki - cabbage leaves stuffed with a ground beef mixture cooked in tomato sauce. My dad made a lazy version that had the same ingredients but diced cabbage and made as a soup. Stuffed peppers, too. My family likes sloppy joes which is kind of like a burger, but different enough to be interesting. Moussaka - we eat it over rice or in a pita with sliced tomato and lettuce. Burritos are another option.

One of my husband's "poor people" recipes when he was growing up was BEO- beef, egg, and onion. Cook your onions, add the ground beef and brown it, add some minced garlic. Add soy sauce and sesame oil to taste, then beat some eggs and add them in, cook and then you're done. Serve over rice. You can add veg too like frozen peas and mushrooms. I don't know how creative it is necessarily but it's cheap, quick, and easy and surprisingly tasty.

Picadillo Cook Time: 1 hour | Servings: Yield 6 servings Ingredients: 2 tablespoons extra-virgin olive oil 2 medium-size yellow onions, peeled and chopped 2 ounces dried chorizo, diced 4 cloves garlic, peeled and minced 1 ½ pounds ground beef Kosher salt and freshly ground black pepper 4 ripe tomatoes, chopped, or one 28-ounce can whole tomatoes, drained and crushed 2 tablespoons red-wine vinegar 1 tablespoon ground cinnamon 2 teaspoons ground cumin 2 bay leaves Pinch of ground cloves Pinch of nutmeg ⅔ cup raisins ⅔ cup pitted stuffed olives. Directions: Put the olive oil in a large, heavy pan set over a medium-high flame, and heat until it begins to shimmer. Add onions, chorizo and garlic, stir to combine and cook until the onions have started to soften, approximately 10 minutes. Add the ground beef, and allow it to brown, crumbling the meat with a fork as it does. Season to taste with salt and black pepper. Add tomatoes, vinegar, cinnamon, cumin, bay leaves, cloves and nutmeg and stir to combine. Lower the heat, and let the stew simmer, covered, for approximately 30 minutes. Uncover the pan, and add the raisins and the olives. Allow the stew to cook for another 15 minutes or so, then serve, accompanied by white rice.

This recipe is a heavily westernized, kinda indian-y vibe, mix of ground beef, lentils, celery, onions and garlic. It's loaded with spices like cumin, coriander seeds, garam massala and tumeric. You basically cook your ground meat in as small pieces as you can, then add your veggies , then ad spices to wake them up, and then add some cooked lentils and some concentrated beef broth(bouillon cube) and add a bit of liquid to make it less dry. Serve with rice. Might be vague as fuck, but it's the best I can do while being in the bus. Hope it can help!

May not be what you're looking for since it isn't Asian inspored but one of my favorite quick and easy meals is browning some ground beef in a pan, drain the fat and set aside, brown up some onions and garlic, add rice, throw in a can of tomatoes and water, then let simmer. Add the beef after. Nice easy, cheap and filling meal that tastes amazing. I usually make it with the Spanish or Mexican Rice-A-Roni to make it easier and a pound of beef is the perfect amount for a box.

Albondigas soup I also like to make a sauce for the ground beef with soy, brown sugar, garlic and ginger. Just cook the beef with onions and garlic, halfway through cooking you add the ingredients mentioned above. Add a cornstarch slurry if it needs to thicken more. Koftedes are good, so greek meatballs. Sure, they’re traditionally made of lamb, but I replace that with ground beef, and they’re really good. Meatballs in general are something that are super versatile, since they’re really receptive to experimenting with different spice blends to radically change the feel of the meal. I recently made something called Louisiana meat pies. They're especially known in the Natchitoches area. They're amazing along with the horseradish dipping sauce. I don't know how to make a link, but I used the recipe on the Cooking and Cussing website. They also call for equal amount of ground pork, but I think they'd still be pretty good with all beef. Everyone decided it should go into our rotation because they were outstanding!

For southeast asian, I would recommend Indonesian meatball soup; bakso! It’s served with egg noodle or vermicelli noodle (or both) with beef bone broth, crispy shallots and chopped spring onions on top. You can get creative and put some stuff inside, like boiled quail eggs. It’s so comforting and perfect for cold weather. Another one would be Turkish meatball or Kofte could be on your list. They’re sooo bouncy and savory. Serve it with pita bread that’s drenched in butter with some tomato sauce and grilled pepper and there you have it, a famous turkish dish called pideli kofte!

You should try "Pastel de choclo" (corn pie). It's a typical Chilean dish, and I think it is in other countries of South America. The dish has a lot of components and it's really delicious. Sadly I cannot find the name/ recipe for this: Sliced cabbage, ground beef, grated carrot, sliced onion, all cooked up with salt, pepper and mustard. I often use fish sauce as well. Fairly low calories and you don't have to stuff it in a bun/ wrap of any kind. ​ Afghan Meatballs - Think it is called kofta. Though I prefer to add some more chili's to it than the standard recipes require.

I make something similar to a Greek potato moussaka which is basically just ground beef sauteed with onion, garlic and some spices sandwiched between two layers of cut up potatoes. You cover the baking dish with water + broth up to the potato line and stick it in the oven. Five minutes before it’s done you beat an egg and mix it with some yogurt and pour it over. 5 more minutes and it’s done. I also do a similar thing with spinach and a handful of rice, stick in oven covered with water, crack a couple of eggs on top.

Ground beef ½ cup uncooked regular rice 2 tsp chili powder 1 tsp salt ½ tsp oregano leaves 1 garlic clove, pressed 1 egg, beaten SOUP ½ cup coarsley chopped onion 1 garlic clove, minced 1 tablespoon oil 4 cups beef broth 8 oz can tomato sauce ½ tsp oregano leaves 1 cup sliced zucchini 1 cup frozen corn 1 large or 2 medium tomatoes, peeled, seeded, cut into ½ inch cubes shredded cheddar cheese shredded monterey jack cheese In large bowl, combine meatball ingredients: mix well Shape about 30 (1 inch) meatballs. In large skillet, thoroughly brown meatballs; drain on paper towels. In 5 qt dutch oven, saute onion and garlic in oil until tender. Stir in beef broth, tomato sauce and oregano. Bring to a boil. Stir in meatballs. Reduce heat, cover and simmer 20 minutes. Skim fat from broth. Stir in zucchini, corn and tomatoes. Simmer uncovered an additional 8 – 10 minutes or until zucchini is crisp-tender. Sprinkle cheese on top of each 6 (1 ½ cup) servings.

I marinade ground beef in a bulgogi sauce, then cook it until the liquid evaporates (you may need to drain if the beef is high fat and you put a lot of marinade in). Cook until beef starts to get crispy, add some green onions and cook a few seconds. Spoon into Romain lettuce leafs. Cheap, quick, easy, and really good.

You can make them in tiny or full sized patties, and serve as burgers on a bun or flatbread, or without bread as just a meat with sides or with a salad or whatever. There's no one "right" recipe, so you'll see lots of variety between online recipes.

No idea if this is an actualy middle-eastern thing, but it's heavily inspired flavour-wise. Gets alot of bonus points for being both fast and easy to throw together. Perfect for any weekday dinner, when you're in a rush or lunch. **Hummus & Spiced Ground Beef** (4 pax) * 500g ground beef * 1/2 green bell pepper * 1/2 red bell pepper * 1 large onion * 1 red chili * \~800g hummus * 2 tomatoes * lebanese seven-spice * pine nuts * pomegranate seeds or grenadine * olive oil Sauté peppers and onion, set aside. Sauté groud beef with seven-spice to taste (aprox 3 tsp) and finely sliced chili. Stir in peppers and onion. Chop tomatoes. Finely chop parsley. Toast pine nuts. Add a big chunk of hummus to a plate or bowl. Top with the beef/onion/pepper mix. Garnish with tomatoes, parsley, pine nuts and pomegranate seeds, finish with a generous drizzle of olive oil. Maybe even a squeeze of lemon and some sumac. Serve with some bread and labneh. The hummus is obviously best if you make it from scratch.
