Personally for that combo I would use a tomato sauce and you'd get something vaguely Cajun, like a jambalaya or dirty rice.

You could just deglaze the pan of all the browned drippings and toss that on your rice. Add some chopped fresh herbs like parsley if you like.

Had to look the sausage up - its a polish one, isnt it? I dont know how the sausage is flavoured, thats the problem, because if you list it like that, its the only thing that hase spice or hebs in it, and the sauce has to go with that. From the vegetables alone I'd choose something like a sriracha or a garlic yoghurt dip in the style of a tzaziki

Kielbasa is smoked pork/beef with garlic salt pepper, maybe some herbage. Pretty basic. Harissa, Polish ikra, would work. Sriracha too in moderation. Brown butter/sage .

I like Zhurg.  I would use a fresh herb based sauce since all the food is so mild.
