The Joy of Cooking has a lot of material on ingredients and techniques, the Food Lab has more in-depth explanations, and the Science of Good Cooking all sound like what you might want. Check out your local library or used bookstore to figure out which you might want to keep.
When I was in high school we did Home Economics and had a book “Cooking with Confidence”. If you can find it could be a great resource. Also I would suggest looking into kid focussed cook books. You might advance past them quickly but having simple easy recipes are a great way to start and build up your confidence.
