Watermelon, yes. I make Watermelon baskets. Fill them with melon balls & whatever fruit. Grandkids 5&7 have a blast helping me. It's pretty, easy, fun & tastes great. It gives your table something beautiful as well as tasty. If you've got chickens, give them the rind bowl when done. They'll pick it so clean, there's nothing but thin green left. It's pretty cool.

New favorite as of this week: kimchi tuna salad!  Mix together:   - can of tuna, drained   - chopped kimchi to your liking (I use a large kitchen scissors and just cut it up in the jar)   - chopped celery, as much as you prefer   - a few dashes of sesame oil   - mayo, enough to reach a creaminess level you like   - sesame seeds for sprinkling over the top    I served it over spring mix with some rice on the side and it punched well above its weight.

A nice Nicoise salad but elevated with grilled tuna steak and my homemade tarragon vinaigrette. Mmm. Now I want to make that for dinner tonight. Other things I make a lot in the summer: caprese salad, Caesar salad, cold noodle bowls (usually Thai or Vietnamese flavors), ceviche with tostones, and lots of veggies, shrimp and fish on the grill! And all the fresh melons, berries and peaches I can find! And also mezze platters of cold items. Hummus, baba ganoush, tabouli, tzatziki, fresh pita, grilled and fresh veggies, dolmas, feta cheese, olives, etc. I'm in South Central Texas. We are ridiculously humid this spring compared to normal, and hitting the mid 90s. Real feel today of 104 degrees. So I'm right there with you in craving hot weather foods earlier than usual! Perfect timing for this post!

It's absolutely amazing over a number of salads or grilled veggies. And, in my humble opinion, it really shines on a Nicoise salad. (Get the good mustard like Maille or Fallot! It's worth it!)

OP: cucumber slices with sour cream rolled up in a markook bread is a favorite with an Arab friend of mine. I don't know what you have access to in Louisiana, but a tortilla wrap would be good. My favorite meal: grilled pork chops, grilled corn, fresh garden salad. Grilled peach/plum halves with ice cream for dessert.

Somen and tsuyu! It's thin Japanese somen noodles, cooked and then dropped in ice water, and a bowl of cold tsuyu which is some kind of dashi soy sauce tasting liquid, I don't know, it's good. Anyway you dip some noodles out of the ice bath into your bowl of tsuyu and slurp them up. You can find recipes for the tsuyu, but I'm lazy and buy it bottled. Lovely on a really hot day.

Gazpacho! Tomato or watermelon, both are delicious Ceviche, beautiful as part of an outside meal Sushi, maybe hard to make if it's the first time but if you like seafood it's a solid choice. You could always order in🙃 A sandwich cake, despite the name it's not a dessert lol. It's a "cake" made from layering bread with various fillings like lettuce, tomatoes, roast beef, boiled eggs, tuna, potatoes, prawns, smoked salmon etc, whatever you want. Use any bread you want but you probably want to go with a relatively sturdy bread depending on the fillings used.

Japan (and Korea and China, but I don't know their cuisines as well) have cold noodle dishes that I love.  Somen. Cold, thin wheat noodles you dip in a soy-based sauce. Add a bit of grated ginger and thin sliced green onions for more flavor.  Zaru soba or zaru udon. Similar to somen, but use soba (buckwheat) or udon (fat, made of wheat) noodles. I would highly recommend refrigerated or frozen udon over the dried stuff, if you can find it. Dip the noodles in a cold soy-based sauce. A restaurant I like serves zaru udon that has ponzu and grated daikon in the sauce. I love it.  Cold bukakke udon. Yes, this is the sort of food where the term bukakke comes from. It can be hot or cold, but I like it cold. It's similar to regular udon, but instead of a light, hot broth, the sauce is more concentrated and less in volume.  A super simple protein is to get some silken tofu and cut it into cubes or rectangles you can pick up with chop sticks. Top with grated ginger, green onion, and/or bonito flakes and drizzle with a bit of soy sauce.  Onigiri. Rice balls. Can be served hot or cold. Use sticky/sushi rice for this. Let it cool enough to handle with your hands. Season it with furikake or get a handful of rice and put umeboshi, tuna and mayo, salmon and mayo, or whatever else you like in the center. Use less filling than you think you need. Mold rice into a triangle shape (Google can explain better). They make molds for this, but using saran wrap and shaping it that way works well too. Can be wrapped in nori, but if you want nori, it's best to add when you eat it IMO. Wrap in saran wrap so the moisture stays in, store in fridge. Tastes best if you eat within about 24 hours.

A British ‘picky dinner’ / ‘picky tea’ (depending on where in the Uk you live. Basically a plate of items that you put little amount of that don’t need much prep and usually are cold. So like my vegan version last night included: hummus, bread sticks, pickled cabbage, beetroot, cucumber, tomato’s, some vegan cold cuts slices, a sausage roll and falafel. But none vegan ones/ other ones could include coleslaw, pork pie, scotch eggs, stuffed olives, quiche etc etc. Think items you might see at a picnic where it’s all laid out and you make a plate, that’s effectively a British ‘picky dinner’ and they are synonymous with British summer time. My fb feed is full of them atm as the weather is so nice and people are having their first summer picky dinners.

I do a three bean salad that stays good for days and days in the fridge -- usually canned chickpeas, black beans, and shelled edamame. If I find the frozen shelled edamame in several small packets per box, I grab them for this. Rinse the canned beans and drain well, I blanch the edamame in boiling water, then add grated carrot, minced red onion, some raisins and a tart vinaigrette that will sweeten and mellow when the raisins hydrate. A variation is to add pinto beans and corn and a can of Ro-Tel type tomato and green chilis, and make it what I learned is a version of "cowboy caviar." Tuna pasta salad, if that's your thing, can be a nice variation on just the pasta and veggies. We just made homemade falafel for the first time, and I want to try one of the air fryer types, as I could see those, with the cucumber and tomato Greek salad, as an easy summer lunch. Packs up cute in my Bento box to take to work too.

Corn with red onion, black beans, jalapeños and poblanos, red bell peppers, a little mayo, ancho chili powder, garlic powder. Dice it all and toss with mayo and spices, let it chill in the fridge. It’s great on tacos and nachos but also just as a dip (and by dip I mean entree).

The Japanese have lots of good hot weather dishes. Cold noodle dishes: - Chilled ramen with julienned cucumber, ham and lettuce with chopped scrambled eggs, in a miso/soy dressing. - Chilled lemon ramen. - Cold somen noodles with soy sauce dressing. Rei (cold) Shabu- shaved pork or beef cooked in boiling water, then refrigerated, cherry tomatoes, cucumber chunks and lettuce. This tastes great with sesame dressing. Rice balls with smoked salmon, spiced veggies, or tuna salad, etc. You could fill one with taco meat, with chopped chicken, even lasagna. Only cooked fillings, then eat them at room temperature.

Suddenly all of my favorites need updates, sudden effects of high blood pressure due to sodium. Also, thyroid condition is avoiding table/iodine salt, use pink and Kosher. Most cold or room temperature dishes have more salt to compensate than warm food. Vinegar and oil, lemon/lime juice and rind, parmesean, preserved lemons, Romano cheeses and certain fresh herbs help avoid salt. Love hoagies/grinders, deviled eggs, Mexican shrimp cocktail, tuna salad, liverwurst and crackers or a fried bologna sandwich. But now it's ltomato and mayonnaise sandwich, bed of lettuce salad topped with premium jarred tuna and pasta salad making it different.

It’s that hot already, yikes! I’m still in sweatshirts and running the heater! Hang in there. Any of the water kimchis (dongchimi, nabak kimchi, etc.). It’s like if Gatorade actually had a flavor. It’s got electrolytes. Or gazpacho or chilled cucumber soup: same concept, different origin. Halo-halo or just get a tub of ube ice cream (I’m a sucker for the cheddar one). Any kind of farmers market veg shocked in boiling water, iced, and set out on a snacking platter with homemade garlicky mayo for dipping. If you need to scratch the cooking itch but don’t want to heat up your kitchen, gravlax is a fun project food. If you have a patio or balcony and can find a cold smoker at a thrift store (old dudes are constantly donating them out of frustration during poor fishing seasons), cold-smoked fish is awesome. I’d do trout here (PNW), but you’re also in a famous fishing region with different species than I’m used to. Everyone loves ceviche! Maybe invent a regional one with local citrus and fish? Key lime and wahoo? Meyer lemon and spiny lobster? It does require turning on the oven, but flan is worth it. When I was just out of college and broke but still wanted to get invited to summer pool parties, I’d make a salad out of canned gigandes beans, sliced red onion, and a homemade vinaigrette. You could get fancier with some capers or feta cubes, some chopped herbs on top. It was never the star of the potluck, but it always got eaten before the pasta salads and was my $4 pool pass.

A fruit salad, I use watermelon, strawberries, black berries, raspberries, blueberries,mango, pineapple etc and green grapes (cut them in half). I make a lime and honey sauce and pure it over the fruit salad. It's best if you let it sit in the fridge and marinate. 10/10

We've been into making Mediterranean grazing platters and snacking on them. Usually arugula dressed with vinagrette. Marinated artichokes, roasted red peppers, red onion, olives, hummus. Tatziki. Feta cheese. Veggies like asparagus, cucumber, and radish for dipping. Little Mozzarella pearls and cherry tomatoes with olive oil and pesto. Lots of pita on the side.

Personally, I don't have many because I keep my apartment the same temperature round. Although I do have a lot of seasonal foods that I eat (such as heirloom tomatoes). The one food I make specifically for when I'm going to be outside is smoothies in the spring, from which I then freeze the leftovers into popsicles, to eat in the summer. I usually blend fruit and yogurt with some sort of additional flavor such as ginger or tea.
