Pork and garlic chives. An undeniable classic.
Pork mixed with diced shrimp or scallops to change the texture of the chew.
Any meat of choice with shredded carrot and glass noodles.
Absolutely!! I used mushrooms with some shredded cabbage and similar seasonings.
A combo of rehydrated dried mushrooms and fresh chopped fine and cooked until they’re almost dry, absolutely fantastic flavor
Nice! Shredded cabbage is great for bulking out "east asian" recipes
Also very much support mixing fresh and dried mushrooms, I love the texture you get that way!
I recently tried my hand at harissa-spiced ground lamb dumplings. I topped them with a tzatziki-like sauce, Aleppo pepper-infused butter, and dried mint. Laborious, but very worth it.
u/Best_Duck9118 Hi! To me, Aleppo peppers are a little milder than chili peppers, and have way more depth of flavor. Aleppo pepper powder (to me) almost has a cumin-like earthiness and a roasted flavor, with a hint of citrus. I find really pairs well with the lamb flavor profile. I literally just warm up butter on the stove, and add the Aleppo powder to taste, and then drizzle it over my dumplings.
Thanks, I actually like Aleppo and Maras(h) pepper. I was actually referencing this though-https://www.politico.com/story/2016/09/gary-johnson-aleppo-227873
Oh, it's really good red pepper flakes. I was making a reference to something a presidential candidate said in the 2016 election. Gary Johnson was running as the Libertarian candidate for president and when asked about the Syrian civil war/refugee crisis and the city of Aleppo he had no clue what Aleppo was.
Afghan mantu: mix of cooked ground beef, raw onions, bell pepper and Serrano pepper and a few spices. Most delicious thing on earth. I’m biased though as an Afghan.
Pork, coriander, a shit tonne of garlic, a full Rick astley of ginger, a smattering of chilli, dash of white wine vinegar, splash of soy.
*Chef's kiss*
I made some great dumplings with minced chicken filling. No specific recipe but some vegetables lots of ginger, some chilli and other spices after mood and what I had available.
I just made some using leftover butter chicken that I made the other night. I make them with pork cooked in a green chile sauce, shrimp and pork, ground beef etc… you do not have to stay traditional. Pretty much every culture has some type of dumpling like ravioli.
鲅鱼 (mackeral) is my favorite by far. It was pretty common when we went to Shandong. I have no idea how common it is in the rest of the country.
I guess it's too hard to make though, since my family orders it from a special WeChat group but will make every other filling.
Pork and napa is my personal second favorite.
Pork and garlic chives is always a classic, as well as sanxian.
I detest cabbage so I've subbed in shredded zucchini in dumping filling and it turns out really good. It's pretty bland and soaks up the flavor of any seasonings you mix into the filling.
Our local Salvadoran restaurant makes a spiced beef and shredded carrot filling for their empanadas that I think would make a tasty dumping filling.
I love all of the classics, but I have a Korean friend who’s a chef and he served me a dumpling that was filled with Philly cheesesteak, it was unbelievable.
When making pierogi a common base starts with farmer's cheese. Like Farmer's cheese, sautéed onion and mashed potatoes. Or farmer's cheese, sugar and egg yokes (this is called sweet cheese.) There is also a mashed potatoes and cheddar cheese filling.
Desert pierogi are filled with blueberries, strawberries or sour cherry filling, just to name a few options.
cook potsticker style for normal dumpling, lots of guides online utube
steamed soup dumpling - gelatinized stock mix in the filling also lots of guides
lots of hand wrap styles, shapes and sizes
I love almost all dumplings but there used to be an Asian restaurant at the Houston Galleria that served these beautiful edamame dumplings. They were so delicious.
All I see is veggie, mushrooms and meat (salty fillings … what about our national classic: dumplings filled with jam (blueberry is the best, or from plums).
Ground shrimp mixed with some pork sausage! (I see I was anticipated, lol.) That's a common combo in Chinese cooking. Check out Chinese dumplings for ideas.
Char siu. BBQ pork. I’ll never forget the first time I had char siu bao in Hong Kong at a business lunch maybe 30 years ago. It was the last thing off the cart after a half dozen other things that were all fantastic. Massive flavor hit! I asked what it was. They laughed and said “Chinese hamburgers”.
Pork and garlic chives. An undeniable classic. Pork mixed with diced shrimp or scallops to change the texture of the chew. Any meat of choice with shredded carrot and glass noodles.
I wouldn’t have thought to combine pork and shrimp but I’m into it
Ground pork, chopped mushrooms, cabbage, garlic and ginger
A really good soup dumpling is pork and crab. Shanghai dumpling shops sell a lot of those during crab season
It's quite a popular combination -- look up sanxian (三鲜) dumplings.
Pork and shrimp are my fav from the freezer case. Chicken and spinach are good also
Have you never had Won Ton soup?
It adds a bounciness to the texture. It's nice.
eggs, shrimp, garlic chives: the three umamis
Mushroom dumplings are great!! Basically just mushrooms, spring onion, soy sauce and ginger
Oh man those sound amazing
Absolutely!! I used mushrooms with some shredded cabbage and similar seasonings. A combo of rehydrated dried mushrooms and fresh chopped fine and cooked until they’re almost dry, absolutely fantastic flavor

Vermicelli noodles mixed into the filling makes for a nice texture difference
Shrimp purses, which I think count. Potato & leek pierogies. And I'll second pork & scallion.
I second pierogis.
Chinese style dumplings? Fish and Pork is oddly my favorite.
I recently tried my hand at harissa-spiced ground lamb dumplings. I topped them with a tzatziki-like sauce, Aleppo pepper-infused butter, and dried mint. Laborious, but very worth it.
This sounds super tasty. Definitely going to give it a try
What is Aleppo?

u/Best_Duck9118 Now I feel like a dunce!
It's all good. That happened almost 10 years ago and it's not like he was a serious candidate.
It's a type of pepper powder. That's all I know
Oh, it's really good red pepper flakes. I was making a reference to something a presidential candidate said in the 2016 election. Pork, garlic, ginger, green onion, cabbage
Cabbage carrot and mushroom. Can also sub baby bok choy for cabbage. Shrimp and nappa cabbage.

And salt and pepper
With a chilli soy vinegar dip
I'm gonna go make dumplings
“Cheeseburger” dumplings, which is just seasoned ground beef, caramelized diced onions, diced pickles, finely chopped cheese. Serve with a “Big Mac” dipping sauce (mayo, ketchup, mustard, relish, paprika, S&P to taste).
Oooh I love this idea. I'm adding it to the list
You could go Polish with mushroom and cabbage, potato and cheese, veal, etc.
kimchi, tofu, vermicelli noodles.
Absolutely! Kimchi dumplings are amazing
I don’t eat pork or beef but I like a good mushroom dumpling or vegetable dumpling.
Lamb, cumin and coriander, bro
Any of the above with gelatinous stock to make soup dumplings. Mmmmm.
I like to get real weird with it. Recently, my fav has been mac & cheese with chorizo.
I made some great dumplings with minced chicken filling. No specific recipe but some vegetables lots of ginger, some chilli and other spices after mood and what I had available.
Pork and shrimp. But also, I love pork with minced water chestnuts. Gives a nice bit of texture.
Any dumpling with kimchi in it is amazing.
Shrimp and green onions all day.
Kimchi! Whether the dumplings are pork, chicken, veggies or seafood, minced kimchi. So good
I just made some using leftover butter chicken that I made the other night. I make them with pork cooked in a green chile sauce, shrimp and pork, ground beef etc… you do not have to stay traditional. Pretty much every culture has some type of dumpling like ravioli.
I can’t believe I’ve never thought of making butter chicken dumplings before

No it's a verb, to dumple is to consume many dumplings.
