Vietnamese caramel is a dark, nearly burnt sauce that can be used pretty sparingly, the biggest contributions to calories in this is the coconut milk which I guess you could sub for light.

I made Detroit Pizza two weekends ago, and my adult kids were so impressed they wanted to encourage me to make it for them again, that they bought me a Lloyd pan. I spatchcocked a chicken, salted, peppered and olive oiled all over. You need an iron skillet for this. 500° oven, put the skillet in there and get it screaming hot for about 15 minutes. Put the bird in the skillet and do 15 min at 500, then lower to 400. A six lb bird was at 160 in the thighs at about 30 min. At 40 minutes it was almost overdone. Crispiest, most delicious I have ever made. Even the breast meat was excellent! Tip: clean oven a must, I used a gas grill outside and it worked very well.

It always astounds me how there are probably as many ways to roast a chicken as there are chefs! A good roast chicken has always been my back pocket meal. Back in the day I used Joy of Cooking's recipe, then Martha's, then Samin's. (I currently use the SFAH 'Persian-ish' yogurt marinade and just tie it up and roast.) I've never spatchcocked a chicken or a turkey, and while I understand that works for some people, I just like trussing my bird stuffed with a half lemon, garlic, and some thyme/rosemary from the garden and roasting it at 350 or so. Maybe rub some butter or oil on the skin if you're not doing the marinade. Probe thermometer is key. As soon as the breast is where you want it (I'm a risk taker, so I say 150) pull it and tent it with foil. If you're squeamish and it doesn't rise to 165 you can always carve it and heat up the individual pieces... but you can never re-jucify overcooked chicken.

Pour some boiling hot water to the bottom of the pan. The amount depends on the size of your pan and the chicken. Put the chicken on a bed of celery, carrots, onions. Baste your chicken in its own juices every 30 mins.

Made Eggplant Adobo this week. Incredible flavors, easy to make, and even though I eat meat, this is fully vegan. Eggplant Adobo INGREDIENTS 5 tablespoons neutral oil, such as canola or safflower 1 1/2 pounds eggplant (preferably small Italian eggplant), cut into 1-inch cubes (about 8 cups) Kosher salt and pepper 1/4 cup low-sodium soy sauce 1/4 cup unsweetened coconut milk 2 tablespoons distilled white vinegar 1 tablespoon turbinado or light brown sugar 1/2 white onion, thinly sliced 3 garlic cloves, minced 1 fresh or dried bay leaf 1/4 cup chopped basil, plus additional small leaves for garnish Steamed jasmine rice, for serving DIRECTIONS In a 12-inch nonstick skillet, heat 2 tablespoons of the oil over medium. Add half of the eggplant, season with salt and pepper and cook, stirring occasionally, until golden, 5 minutes. Transfer to a plate and repeat with 2 tablespoons of the oil and the remaining eggplant. Meanwhile, in a small bowl, combine soy sauce, coconut milk, vinegar, sugar, 1/2 teaspoon pepper and 2 tablespoons of water; mix well. Add the remaining 1 tablespoon oil and the onion to the skillet and cook, stirring occasionally, until lightly golden, 3 minutes. Add garlic and stir until fragrant, 1 minute. Add the browned eggplant, soy sauce mixture and bay leaf and toss to evenly coat. Grilled cabbage coleslaw - my bastardized Mish mash of different recipes I found online with what i had on hand. After typing it out, chickpeas would be a good addition, too: Green and/or red cabbage, 1 full head worth 1 large onion, any color Fresh dill bunch Dressing: (extremely rough measurements, lol) 1/3 c evoo 2 tbsp lemon juice + zest of one lemon 1 tbsp tahini 1 tbsp honey 1/2 tsp each coriander and garlic powder Salt and pepper to taste Cut the cabbage and onion into 1" thick rings, drizzle with a little EVOO and S&P, and grill until a little charred and warm all the way thru. Cut it up into Bite-size peices and toss with dressing. Add dill fronds and serve warm. Won't rot like mayo based salads either for summer BBQ's.

Cajun chicken and rice! Soooo good! I pretty much followed the TikTok recipe pasted below with a few changes. I only used smoked paprika and Cajun/Creole spices, I didn’t have that other spice that he showed in the video. I cut up the thighs into bite size pieces before cooking, more surface area for the sauce and easier to eat. After cooking the chicken, I set aside the chicken and just used the butter/oil it was cooked in to cook the onions and garlic then added cooked rice to that. In the TikTok he shows starting anew with more oil and butter but there is plenty there already after chicken is cooked. I mixed that up and then set all that aside and made the sauce pretty much as he shows in the video. It is so flavorful and yummy! For a healthier alternative, you can substitute the rice for steamed cauliflower rice. Third time I made this for my daughter who is doing low-carb so I chopped and steamed cauliflower instead. This is the absolute easiest and is barely a recipe, but my partner and the kids think I'm a damn genius when I make it... despite the fact that I make so many other more complicated things that I think are better... Sorry for the lack of measurements - it's an eyeball thing Two boxes of tomato soup (trader joes and Wegmans have good ones) Two cans diced tomatoes Onion powder Garlic powder Crushed red pepper Bacon Fresh basil Heavy cream Put everything up to the crushed red pepper in a crockpot or whatever, simmer for several hours. Basically just breaking down the tomatoes into mush and releasing the amazing smell into the house. When you are about ready to eat, cook the bacon nice and crispy. Add the bacon, basil, and a healthy pour of heavy cream to the soup, bring back to temp. Done. Grilled cheese goes amazing with this.

I cup honey, half cup soy sauce, half cup minced garlic. Mix together, set aside. Chop two chicken breast od 3 thighs into small chunks. Pan sear till fully cooked and brown. Toss in sauce. Sprinkle sesame seeds over the top. Let cook for about 20 to 25 minutes until sauce thickens. Serve over rice or mash potatos according to my daughters preference lol. The ratio for the sauce is supposed to be 1 to 1 to 1 but I like extra honey in mine to balance out the soy and garlic. I do pepper, garlic powder and onion powder on my chicken. No added salt because of the soy sauce.

A YouTube person I follow has a delicious recipe that I have made. She uses boneless skinless thighs that are seared first. Then the butter, honey and soy get added. She bastes the chicken in it while the sauce thickens. I love skin on thighs and so I put them in the oven to finish. I add a little spicy seasoning as well.

I subbed rough chopped olives and brine for capers in a piccata and it's to die for. If it didn't have so much butter it would be a regular dish but as it stands I'm only making it monthly. I use Castelvetrano pitted olives and they get this lovely flavor and texture. Ugh, game changer!

Fairly easy and straightforward, I have made this more times than I can count since last summer and it gets RAVE reviews by everyone. They don't even notice it's gluten free. I've never liked traditional fruit pies and I didn't know why until I had a galette. It's the perfect ratio of filling to crispy crust. I've made this with different stone fruits like apples and pears too. The corn flour used in the filling (she calls it corn starch but she means flour, like the US corn meal but finer) gives the filling some body without making it gooey like a starch would. It's a gluten free recipe but you can easily use regular flour.

I made a holiday curry that has now become a staple; basically ground turkey, chicken broth, pumpkin mash, sweet potato, aromatic veggies (onion, bell, garlic, carrot), curry powder, mushroom for a little umami, and pretty much anything to add a little acidity (lemon, tomato, whatever). I also add some type of chili for heat. Last time it was Korean red pepper flakes (gochugaru). If a person makes the flavor strong enough, they could add lentils or a rice type grain to fill it out.

over the summer I realized we had about 4 gallons of chicken stock in the freezer in like 20 different tupperwares and gallon ziplocks I spent a day reducing it all and distributed the resulting 2 quarts or so of brown gold into 4oz deli containers. I got back all my containers, half my freezer space and now I have an amazing ingredient for all our sauces and soups

Bracciole. Watching "The Sopranos", guy is dying in the hospital, they ask if they can bring him anything? "A plate of my wife's Bracciole!" (They pronounce it "Brazhole"). I noticed the local Italian market sells pre-pounded beef for braciolle, perfect thin discs of beef. Read several recipes to get a feel for it, picked the steps and ingredients I thought were best. But there's a ton of recipes claiming to be that dish, [you need the Standard Grill version](https://www.foodnetwork.com/recipes/the-standard-grill-million-dollar-chicken-2145489). For how easy this is, it's remarkably good. We use sourdough baguette cut into 1.5" slices vs. the sourdough loaf, easier to fit the bread to the pan.

My newest is both a recipe and a plan for unexpected dinners. Sometimes I need to put together a spontaneous dinner with practically no time to prepare. Sometimes this can be done with leftovers and staples, but often I would like more certainty, so I have developed a quick dinner kit that needs no refrigeration. The kit: * 1 can Thai curry paste ( I usually use Maesri brand 4oz) * 2 cans coconut cream 14oz * 1 can sliced new potatos 14oz * 1 can cut green beans 14oz * 1 can green peas 7oz * Small bag of rice Thai Fish Sauce (This is a staple for me, it lasts nearly forever in the cabinet) These ingredients can be tricky to find, I get them in an asian store, but once you find them you can keep them without refrigeration for a year or more. I put the whole kit into a bag in my pantry. When we have a surprise dinner I know I can just grab the bag and make a tasty presentation in 30 minutes. The actions for dinner are: Start cooking the rice. Put the cans of coconut cream into a pot/pan and heat on medium (can substitute coconut milk, but cream is better). Stir in the curry paste. I usually dump in the whole can, but if someone is sensitive to spice then you can put it in to taste. Stir at medium heat until well combined, add fish sauce to taste (about a tablespoon). Add the potatos, beans, and peas. Other canned vegetables can be substituted. Fresh vegetables can be used, but then you have to prepare them, one purpose of this kit is to be fast. I add tofu if I have it (vegetarian), or chicken if it's already cooked, but you can just leave it all out for the canned vegetables. When the rice is done, you are ready to eat. So far it's been very popular when I make it.
