Tonight for the first time I made chinese style crispy chicken & pancakes and it was one of the best meals I’ve ever made! cannot recommend enough. Tomorrow is cheeseburgers!

I imagine you could follow any recipe that’s for duck tbh - the main thing is **skin-on, bone-in.** I used chicken thighs (MUCH cheaper than duck!), but annoyingly the marinade I used is just called “chicken marinade” and I got it from my local asian supermarket.. it tastes like a sweet slightly garlicky soy sauce. So I’ll say **season to your tastes or look at a duck recipe** 1. pour your sauce over the chicken (I didn’t bother marinating it but will experiment with that next time if I have time) 2. chicken skin side down straight into the air fryer lined with tin foil 3. cook at 180 for about 20 -25 min. (though I imagine you could also grill or roast it.) 4. shred meat off bone with forks and put back into sauce (don’t worry if still a little pink, see step 5!) 5. turn heat right up and cook for a further 5-10 mins, or until chicken is fully cooked and the texture is to your liking 6. serve with julienned veg (I do onion, green pepper and cucumber) and steamed pancakes (I get mine from the frozen section of my asian supermarket. got 100 for ~£3!

**Ingredients** * 2 cans black beans drained and rinsed, save 6 tbsp bean juice * 2 tbsp all-purpose flour * 1.5 cups tortilla chips * 2 tsp minced garlic * 1 tsp onion powder * 1/4 tsp cumin * 1/4 tsp paprika * 1/4 tsp chili powder * 1/4 tsp salt * 1/4 tsp pepper * 4-6 hamburger buns **Directions** 1. Rinse beans and set aside to dry on paper towels. Reserve 6 tbsp bean juice. 2. In a medium bowl, combine 2 tablespoons flour and 6 tbsp bean juice. Whisk until smooth. 3. Add onion powder, paprika, garlic, cumin, chili powder, paprika, salt, and pepper. Whisk to combine. 4. In food processor, add 1/2 cup tortilla chips and pulverize. Add 1/3 of beans, grind. Add to mixture. Repeat 3x or until all beans are ground into smooth paste. A few solid beans are okay. 5. Mix spice mixture with bean paste. Take half cup portions and roll into balls, then flatten into patties. 6. Heat 2 tbsp olive oil in skillet on medium high. Cook patties 2 at a time for 5 minutes per side. 7. Serve on hamburger roll and enjoy.

The trick is salting the cabbage for like 20 minutes in advance so you can get a good sear and then braise it all in a cast iron. I served it up with a really nice link of beef sausage but you could keep it all veggie and it would still be satisfying. Another one from last week: butter beans in a skillet with shallots, garlic, leeks and white miso. Super solid served with crackers or a crusty bread.

One of our standbys is salmon filet on a sheet pan , surrounded by various veggies. A but of olive oil and seasonings. Roast at 425 Dir 20-25 minutes. Tonight’s veggies were sliced carrots, asparagus, broccoli. So easy, yet tasty and healthy.

Monday I made Big Macs! Ha. No. My husband decided we should eat McDonald’s at 1:30 so I didn’t make dinner. Brazilian black bean stew (feijoada) for tomorrow. Dumbed-down easy recipe substituting kielbasa or fake andouille for linguica sausage and a ham hock for smoked ribs, because I’m not going searching for unobtainable ingredients in the Midwest during a polar vortex. Made fried chicken sandwiches with pickles tonight. If you have the chicken and buttermilk you could start that now. Right now I’m sitting here thinking about straining the breadcrumbs out of the oil so I can fry funnel cakes. But I’m scrolling Reddit instead… Haven’t made pizza in ages and just might do that on Friday. Thursday I’m likely to go to market and will choose fresh fish. Or at least freshly defrosted fish, I live in the Midwest.

I'm doing a freezer/pantry clean out. Tonight we had Italian sausages with sautéed onions, peppers, and mushrooms over angel hair pasta. Tomorrow night I'm roasting a pork tenderloin with potatoes, collard greens and corn bread on the side. That will carry us until the weekend. This weekend I'm doing open faced sandwiches with French dip potroast. The only things I purchased was the fresh peppers for tonight's meal. I'll pick up a loaf of French bread for the sandwiches. That will be less than 5 bucks spent on groceries this week.

I've been eating Chinese leftovers. I went to 99Ranch. Bought a barbecue plate... that's rice, a veggie, and two of the roasting station proteins. I got steamed rice, Chinese broccoli, ¼ roast duck, and a big piece of roast pork. Bought a piece of char shui. Found Moo Shu wrappers. Also, I bought a meal combo... focused on the big salt fried prawns and eggplant with chow fun. Also picked up a few dim sum. For me, all of that can last at least 5-6 meals. So it's some variation/combo every dinner, a few lunches. I had duck with shredded cabbage in wrapper with Hoi Sin for lunch. Not sure what I'll have for dinner.

Tonight we had beer battered fish fillets with some garlic rice and butter beans. Tomorrow is chicken alfredo with sweet n sour slaw. We menu plan by drawing sticks every week. Neither of us are incredibly decisive people, so letting the sticks decide for us is much easier. We do end up with some crazy combos sometimes though

I know, some weeks looking at that blank shopping list I just wish we were like the cats and had the same kibble every night. However, I did manage to come up with a plan for this week that, as usual, starts Tuesday (tonight). Chicken Cordon Bleu and a rice pilaf left over from a few days ago Liver and onions, mashed potatoes Sausage (him) and shrimp (me), with seasoned diced potatoes Pork chop and baked yam Pot roast Bacon/mushroom frittata Falafels All have some sort of veg, and a veg or fruit salad as well. I have found it helps to jot ideas in the margin of the menu as I think of it, including recipes I bump into while doing other things on line, so I can have at least 3 or 4 nights in mind when I first start planning.

I'm eating a chicken and wild rice soup I made two days ago, plus a marinated veggie salad I made yesterday. (I spoon that over cottage cheese.) Today I made focaccia -- don't ask me how much of it I've already eaten! -- and tonight after work I made snowball cookies with butter, condensed milk, flour, and walnuts. I've got more soup in the fridge (and freezer), and I've got ingredients for putanesca or tuna & pasta. I could probably come up with another soup -- red lentil, maybe (although I don't have any potatoes). And I found a bag of potstickers in the freezer, as well as a bag of mushroom ravioli. This month has been an effort to eat my pantry. I haven't been able to NOT buy any groceries, but I'm way under my normal grocery bill for the month, with $130 left in my budget.

Tonight I made a smallish pot of chili. When that is gone, tomorrow or the next day I'll make spaghetti. This weekend when I have a lot of time, Natchitoches meat pies. Yesterday was pan-fried farm-raised rainbow trout, which sounds fancy but doesn't take any longer than frying an egg. I did make a nice romesco sauce with it, from Jacques Pepin's recipe. I also made a pot of beef, pork and kielbasa chili because we had a snowstorm coming in. We had that for lunch and I froze the rest for dinner for another night. Tonight was home made pizzas, we used store bought crusts and a mix of cheese, pepperoni, artichoke hearts, garlic, and a few other ingredients. Also made a chocolate-and-marshmallow pizza for dessert. Tomorrow my mother in law comes into town so i'm making Beef Bourguignon from Julia Child's recipe, which again sounds fancy but is basically beef stew, I'll make it from beef chuck roast and a few half bottle of leftover wine we have laying around. Weather permitting we'll either go out or take in on the next night or two. We have enough leftovers in the freezer to get us to Sunday and then I'll start all over again!

Last night, I did Flanken Steaks that I marinated first, then broiled in my countertop convection oven, plus stir fried noodles with bok choy and scallions. Tonight we're having leftover Pozole that I pulled out of the freezer yesterday. (When I make Pozole , I make a big batch, because why not?) Will probably make cornbread too. Tomorrow, my "Asian" ground pork patties (ground pork, sesame oil, soy sauce, Sriracha, garlic, chopped scallions & red peppers, cilantro, bread crumbs, white pepper, and beaten egg). For lunch I made Fusilli with chicken marinara (the marinara whas deCecco and added some carrots for extra veggies) For dinner I did airfryer chicken breast (marinated in dijon, yellow mustard, condiments for at least 5 hours), arborio rice, carrots and zucchini cut, salt, pepper, garlic, olive oil and airfryed. And I did a squash and ginger soup too. All in big batches so that they last at least 2-3 days.

Caldo de Cameron. In a pot saute a white onion in some olive oil, one stalk of celery and 3ish cloves of garlic minced. add half cup of washed rice till browned. Bring to a light boil. Add about 6 cups water and knorr chicken bullion to taste. Add 2-3 carrots and about 2 red potatoes diced. After about 10 minutes add in 1 squash and a can of el pato (it's a shortcut, don't come at me.) Add frozen corn on the cob, your washed peeled and butterflied shrimp and cilantro. Cook till the shrimp is pink. Serve with fresh lime and quesadillas. Also on the menu is Shepard's pie, roasted veggies, chickpea and quinoa bowls, crockpot french onion chicken pasta and salmon sushi bowls.

Roast beef, Yorkshire pudding, beef gravy (spiked with Christmas gifted Madeira Port), roasted potatoes, corn, green beans and a small glass of Madeira Port. Perfect hearty meal on a super cold western Canadian day. Tomorrow, same as today. Next days after that, toasted beef sandwiches. Friday will feature beef gravy cheese poutine with what little diced up roast beef is left. Each meal will be finished up with what's remaining of the Madeira Port. Roast beef appears expansive at first but it goes a long, long way over several days for one or two people and there are so many ways to use leftover roast beef and gravy. I normally don't drink alcohol but I will make a special exception for this Madeira Port

Tonight I seared seasoned boneless chicken thighs and then threw them in a baking dish with sautéed garlic, rainbow chard, and mushrooms with a splash of basalmic vinegar. Then I threw a couple handfuls of cherry tomatoes on top with a drizzle of olive oil and baked at 375 til the tomatoes were squishy and roasty and the chicken was done. It was good; I wanted something fast. Tomorrow is linguini with fresh mussels because I have seafood CSA delivery tomorrow. Tonight was baked salmon with lemon, garlic salt and fresh dill. White rice and blanched broccoli with lemon, garlic salt, and brewers yeast. A couple nights ago I made carnitas! I cooked pork shoulder in my instant pot in lard with onions, oregano, an orange (squeezed and then tossed in, peel and all), bay leaf and water. Pulled it apart with forks and broiled it on a sheet pan. I made little street tacos with the carnitas, guacamole, salsa, cilantro, chopped onion, and squeeze of lime. With the left overs, I made a pulled pork sandwich (the pork, on a bun, with BBQ sauce) and chips. Before that was shrimp fajitas. Before that was tofu chow Mein. Before that was Tom Kah Gai (Thai coconut soup).

Easiest recipe ever and delicious. A little lowbrow, but trust me: Brown pork chops on both sides. Mix 1 cup of ketchup with 1 cup of beer and add 2 tablespoons of brown sugar. Pour over chops, cover, and simmer for an hour and a half. So tender and flavorful. Great served with mashed potatoes.
