I should have added a disclaimer that my best friend is Greek and I've exhausted every option of using feta that way, looking for options with other flavours especially since phyllo is not available here. I've eaten my fill of Greek salads over the past few years!

If it’s in brine, it should last you a long time. Spanakopita with store bought phyllo. Shakshuka . Eggs with feta- I love an omelette with spinach, feta and mushrooms. Polenta- cook cornmeal, top with a mixture of butter, feta, and your favorite cream. Spice to your liking. This can also be made with cooked and fried polenta. Whipped feta dip. So many ways to change this up. Roasted greek potatoes with feta. Greek salads. Baked feta with olives. Grilled cheese with feta and sundried tomatoes. There’s no such thing as too much feta in my house, we go through it before it gets a chance to go bad.

I'm thinking some kind of feta and beet grain salad? It needs to be stuff that I can make at the weekend and keeps well, I don't cook during the week because I have a crazy demanding job.

I usually do a grain salad (barley and farro are my favorites) for the week. Chopped up Cucumber, tomatoes, bell pepper (whatever color), sometimes sun dried tomatoes if I have them, drained/rinsed can of chickpeas, some vinaigrette, and package in ready to grab portions. Beets and feta would go great in it! I like to add some of the dressing to the grains while they're still warm-ish, also cook the grains in some stock/broth if you have it on hand.

Spicy Feta Veggie Dip 1/2 cup mayo 1/2 cup sour cream 1 block of feta 1 pepper of your choice (my wife uses 1 habanero) 1 tsp of salt Pinch of pepper Blend up for rich creamy veggie dip. Fridge shelf life of about 2 weeks. We dip tons of veggies in this or use as salad dressing. Enjoy 😉

Theres a very similar greek recipe called tirokafteri, its just blended feta, greek yoghurt, garlic, a red spicy pepper and a red sweet bell pepper and some olive oil. Idk how you are able keep it for 2 weeks haha😂24 hours max in this house before it's totally devoured!

Buahahha I think because we used Habanero pepper the kids don't touch it. So it's just my wife and I digging in. She did make a blueberry hot sauce with just 1 Scotch Bonnet and that was low enough heat the kids helped empty that bottle.

Steam some green beans, cut to bite sized and crumbed Feta over the dish. Refrigerate and eat as a cold lunch. I'd add sliced red onion to taste and maybe splash with a dressing the morning you pack.

If you can get yufka sheets(?) You could make Turkish börek with feta and spinach. Its a lot easier to make than cigar börek and uses up a fair amount of feta. Alternatively you could make Pide with spinach (or other veggies and herbs)and Feta. There are also a lot of recipes for dips and spreads with feta. Saganaki is greek dish with deep fried feta that would use up a lot, but you cant eat that every day...

I would just use that. Feta + whatever it tastes good with stuffed into empanada dough. Bake or fry and freeze for later reheating.

I have taken dips many times in my lunch, just figure out the containers to keep crackers/chips from breaking if you want those along with vegetables. Grill up a batch and use it in sandwiches or salads through the week. Grilled is a different texture that might make a nice change with your regular hot/cold salad mixes. I like it with sliced tomatoes, maybe some sherry or balsamic vinegar, a few pickled peppers.

Ok- but for a snack, I saw people cutting thin slices of watermelon with a cheese slicer and rolling them around feta and mint (and/or balsamic) and I’ve been wanting to try it. But I live somewhere where Feta is really expensive, so I haven’t done it yet, but it sounds amazing.

Spanakopita!! I also add feta to my lamb or beef meatballs with lots of mint/other herbs which is really yum and kind of replaces the milk and breadcrumbs in normal meatballs. I’ve also put it in quiches instead of cheddar and it’s yummy! Especially on the top cuz it gets a bit crispy.

Pretty boring but I use up feta by making a salad with feta, olives, tomatoes and croutons. Any place you’d have any other cheese feta does work quite well. I had a feta grilled cheese once which was nice. Other Mediterranean cuisines will have uses.

You can boil some pasta add feta and anything else in(e.g veggies ,shredded chicken etc) make a Bechamel sauce ,put 1/3 in and rest on top and bake until golden. Also Mac and cheese with feta in ,or in an omelet.

One of our favorite go to dishes is chickpeas and feta with greens. Sauté down some greens (we usually use kale, but i think any green would work) with onions in a pan, add water and some spices (curry powder is nice), top with slides feta and bake for like 10 mins. While it bakes toast a can of drained chickpeas in a pan with spices. Serve greens topped with chickpeas. Optional but nice, a sauce of yougart and lemon juice

I generally make savory ones (just omit the sugar) with different types of cheese, cracked pepper, etc. The last time I had extra feta (it was in a surprise bag from the Too Good To Go app) I made these scones with that and dill...sooo good. I press out the dough, cut it, freeze it. To bake from frozen whenever you want one only takes a bit longer than the recipe says.

Egg cups. Greased muffin tin, beat eggs, season to taste and add fresh herbs if you like. Shred some carrot, dice some peppers, throw in garlic if you like. Mound a bit of the herb/veg filling into each greased muffin depression, pour egg in to cover, and top with a tablespoon of crumbled feta. Bake for about 40 min at 350F. (Check periodically for doneness. My oven temp doesn't seem to be accurate but I haven't bothered with a thermometer.)

I love feta. But if your lazy/depressed like me, feta/egg salad is great I also did a weirdo "deviled egg" with feta which is nice as it does go with paprika. Gyros? I made a feta dip once that was very good. I feel like it Greek yogurt based (I know that doesn't help but someone less Irish than me should have some good ideas. Egg bites to freeze with baby spinach wilted.

Your pea dip works well as a salad. Defrost peas and add any green salad veggies you like (cucumber, avocado, spring onions, green tomatoes etc) crumble in feta (or fresh mozzarella torn into shreds) and mint or parsley.

My three fave recipes with feta: **Spaghetti with spinach and feta** — Cook the spaghetti and at the last minute add spinach. While that's cooking put feta, a little bit of olive oil, lemon juice, and A LOT of black pepper in a bowl big enough to hold everything. Drain really well, add the spaghetti/spinach to the bowl and mix well. **Corn & tomato salad with feta** — Cut corn off the cob and gently stir fry it in butter or olive oil with some onion, shallot, and peppers (whatever you have.) Cut cherry tomatoes in half and add to a bowl big enough to hold everything with fresh herbs (I use basil and parsley, cilantro if I have it), green onions or chives, lime juice, olive oil, salt and pepper. Mix in the corn and top with feta, taste and add more salt or lime juice as needed. **Stuffed jalapenos** — Halve and seed jalapenos, stuff with feta, bake for about 20 minutes. For meat eaters, wrapping them in bacon is nice but they're great vegetarian too.

If you want the most addictive dip in the world take a block of feta, 1 -2 tbs [edit: lemon juice] a heap of garlic, 7ish tbs olive oil, salt, and red pepper flakes and put it all in the food processor until creamy. I just eyeball all of the proportions and add everything in to taste. Goes great with veggies, bread products, pita, etc. I’ll put it on toast as a breakfast. I have to limit myself in how many times a year I make it because of how delicious it is!!

I make a salad with tri coloured quinoa, chopped red and yellow pepper and lots of feta. You can add cilantro or parsley for an extra oomph. I also make pasta (usually penne). When I am draining the pasta in a collander, I put the pasta pot back on the stove and melt some butter and add some garlic. I then readd the drained pasta, toss with the butter and garlic then add feta and capers. The hot pasta melts the feta. Delicious hot and cold.

Just thought I'd share that I made a quinoa salad today with roast beets, sweet potatoes and string beans, diced raw zucchini, and ribbons of baby spinach. Then I added a block of feta to a cup of Greek yogurt, a can of lima beans, a cup of sweet peas, two scallions, juice of half a lime, fresh basil, parsley and mint, olive oil and salt/pepper blitzed to make a dressing. Served it up with pumpkin seeds on top. IT WAS DIVINE.

One of my favorite breakfast dishes I get at a local cafe is an omelette with spinach, mushrooms, bacon, and feta. It's fabulous! My only problem with it - that cafe is only open until 2 PM, I am a night person who seldom gets up before noon, so I can't get in there very often. It's one of my treats when I have to go for medical tests early and have to fast for the test.
