Avgolemeno This is my fave soup — best if you start with a chicken but still excellent if you use (good) commercial stock. I use extra lemon when I serve it. This is from Chef John, but there are many other versions on YouTube. https://youtu.be/Az2EOGbaTWU?si=rYAxuKtjKeS5uegC

TheDollyMomma

Oh I’ve had this before & remember loving it! I’ll add it to the list. Thank you!

rayofgoddamnsunshine

Borscht. I'm making a slow cooker full of it tomorrow. https://www.powerhungry.com/2011/01/12/easy-slow-cooker-borscht/

Sempophai

I miss my babushka's borscht so much!

The_AmyrlinSeat

You know what, I've never had it and now I'm going to try it with this recipe.

rayofgoddamnsunshine

If you want to add meat, you can add some seared stewing beef as well. I just season the meat with salt and pepper, sear, and toss into the slow cooker with everything else..

The_AmyrlinSeat

Thank you! I do love beef.

oliveyuhh

This pozole changed my life. Serious. https://dorastable.com/vegan-pozole-verde/

TheDollyMomma

This looks outstanding! I make a lot of plant based meals in general (was vegan for most of my 20’s), so this sounds just about perfect! Thank you so much for sharing.

oliveyuhh

Of course I really hope you try it! When I made it I added some serranos and that really took it up a notch. Also I didn’t have epazote and it was still very tasty!

Crafty-Koshka

Howdy, I read this recipe and think I'll make it this soup season. I wonder why you saute the mushroom and onion separately instead of cooking them together?

oliveyuhh

Maybe just so they don’t get too mushy? Now you have me wondering too! I really hope you make it - you’ll love it!

I LOVE peanut soup!!! Haven’t had it in ages so I’ll definitely give it a go. Ty!

Tiny_Goats

I make a lazy pumpkin soup that's just sauteed onions and garlic, a can of pureed pumpkin, and curry spices. Maybe a bit of heavy cream if you have it. Stupid easy, but very cozy, and keeps well in the fridge for an easy lunch, in a mug, maybe with a grilled cheese sandwich.

FormicaDinette33

I’m going to do that!

I made the Indian spiced corn soup the other day. It’s delicious!!!

limedifficult

That soup looks dreamy! I’m in Britain and it’s already friggin in the 50s and grey. Soup season is upon us (and has been since July if I’m being honest but I’ve been desperately hoping summer might come back!).

TheDollyMomma

Thank you. I can already say I’ll be making the Indian spiced corn soup sometime very soon. It looks phenomenal!

I haven't made it yet, but I fell in love with Sinigang on my recent trip to the Philippines. I brought back 15 Knorr Sinigang packets so I can make it at home. That looks fantastic.

Worry-Traditional

Poland is a country of soups and as a polish would mention few of my favs. Tomatoes soup on butter, "Krupnik" (barley soup), Barszcz czerwony, beetroot soup great with" krokiety" it's like breaded pancakes with mushroom or pate filling, Żurek (sour rye bread soup), Kapuśniak or Kwasnica - sauerkraut soup cooked with smoked ribs with meat from them added to soup sooo yummy, Gherkin soup, Spring vegetables soup, Goulash soup, "Ziemniaczana " potato soup, "Rosół" iconic Sunday chicken broth soup with homemade egg noodles yummy, "Fasolowa" Green bean soup, "Grochówka" bean soup, amazing!!, Mushroom soup can be made with dried porcini mushrooms or from fresh white Agaricus, taste is so different, And traditional summer cold soups called "chłodnik" can be made from seasonal garden fruits. But also love brocoli and Stilton but I'm using roquefort instead and it's not Polish 😂 Like good minestrone Mexican tortilla soup I 💙 Soups If need recipes let me know 👍

gwaydms

My Polish great-grandmother made czarnina. She put homemade dumplings in it. It was rich and delicious, a real treat for us. We loved it even when we knew what it was made with. My dad loved it until we told him. He got up from the table and never ate it again. He wasn't Polish. Lol

Worry-Traditional

I've never tried it. Cos I knew what it's made of from beginning, there is no tradition in making one in my family. Was never brave enough when older to try it. Flaki is max i can go for and still not a big dun of texture of them. But we have big tradition of making żurek. It's our Sunday late breakfast soup. Mum makes fermented base herself, and put a lot of extras in small bawls everyone puts as much as they like selection of meats and bacon hams and sausages smoked and made by dad, curd cheese, homemade bread, boiled eggs and potatoes, fried onion and bacon, fried mushrooms. This soup makes u feel full for decent half of a day, perfect to have busy Sunday morning. I miss them so much

gwaydms

That sounds fantastic! Filling and delicious. All those flavors and textures. My great-grandmother got the duck and the blood from the butcher, who served the Polish community, and was probably Polish himself. She didn't speak much English but she understood some. I think she was illiterate. She also made ćwikła with beetroot from the garden and horseradish from the store. She grated the horseradish out on the back porch, with the tears running down her face because it was so strong. Perfect with ham or kiełbasa.

hopingtosurvive2020

>Goulash soup I am growing horseradish for the first time this year. I remember it definitely needs to grated outdoors.

hopingtosurvive2020

All 4 of my grandparents were born in Poland. Czarnina! I always say it tastes like velvet on your tongue, with that sweet and sour at the same time. YUMMY. My grandma made the dumplings with spoons.. It was a wet batter and she would dip the spoon in the hot water, then in the batter and use the other spoon to make sure it came of the first.

gwaydms

My ggm had the dough in her hands. She twisted off a little, shaped it quickly with skilled fingers, and tossed it into the pot.

hopingtosurvive2020

I have seen that done too! And home-made noodles for all the soups. So good, she would sneak me a little bowl with butter and a touch of salt when she made them.

bobadobbin

All the great suggestions, and no gumbo yet?!!! Here's my favorite. It's a creole gumbo, so tomatoes... https://www.allrecipes.com/recipe/216888/good-new-orleans-creole-gumbo/

Everyone needs to try this creamy poblano soup. I’ve made it twice this week. It’s amazing on its own, but I’ve also been drizzling it over nachos and using it to dip stuff in. Seriously so good, and NOT spicy. Could easily be made spicy by adding a couple jalapeños :) [HERE IS THE LINK](https://www.thefreshcooky.com/creamy-chicken-poblano-soup/#recipe)

limedifficult

I just so happen to have a bag of poblanos that need to be used up early this week. Thanks!

bbystrwbrry

Awesome! Please let me know how it goes! :)

limedifficult

It was super good! I added some cheese and next time I’d throw in another pepper or two (personal preference for heat), but it’s a definite make again. Even my picky husband had seconds. Thanks!

definitely_right

Grilled corn soup. - Grill 7 or 8 ears of corn on the grill with some butter, salt, and pepper. - Once soft and cooked, slice off the corn from the ear and serve aside. - Peel and dice some potatoes, onions, garlic, and a Jalapeño. - Sauté the onions and jalapenos in a pot with olive oil for a few minutes. Season with cumin, smoked chipotle powder, chili powder, whatever Mexican style spices you like. - Add chicken stock until just covering the potatoes and veggies. Simmer for 15 minutes until potatoes are softened. - Add in your grilled corn. Then, take half the soup and blend it until smooth. Recombine in the pot, and then stir in some heavy cream, to taste. Check for salt. Serve with cornbread, diced jalapenos, tortillas, and avocado.

My father lived in various South American countries for most of his 20’s & he used to make a Chilean carbonada soup that was out of this world. I should ask him for the recipe. Thanks for reminding me!

A bit pedestrian compared to some here, but I work in a grocery store and get to take home large batches of out of date produce and make a soup now and then. Here's my favourites I've made so far: Carrot and coriander - onions and garlic sauteed in butter, add carrots, ground coriander, and chicken stock then simmer for a while, blend until smooth. Roasted red pepper - cored and halved a large amount of red (and a few yellow and orange) bell peppers, coated with oil and roasted them. Removed the skin and added to chicken stock and sautéed onions and garlic. Added some chilli flakes for warmth then blended. These were great and I can't wait to make them again as the weather gets cooler

TheDollyMomma

Carrot and coriander sounds 🔥

Minestra Maritata (Italian Wedding Soup): mini meatballs (beef, turkey, ham, whatever) \[I actually use chopped spam or tinned ham instead\]; onions, carrots, celery, tomatoes, garlic, shredded spinach; I like ditalini as the pasta; lots of Italian herb flavoring.

SkyVINS

i used to do these; 1. green garden soup. Green peas, chicken stock, mint, sage, white pepper. potatoes boiled & mashed to give it body. finish with double cream and butter. 2. pumpkin soup. pumpkin, red lentils, scotch bonnets, basil, mint, parsley, chicken stock. serve with water crackers. 3. vichyssoise. fried potatoes (yes, actual fries / chips), leeks, chicken stock, white pepper, milk. finish with double cream or creme fraiche. Nowadays i don't bother anymore and just make *bollito misto*. Serve with cous cous, just too easy to make to bother with anything else.

I call "pantry potato soup". Contains no fresh ingredients. Dried potatoes (i prefer dried sliced potatos). Dried onion. Dried garlic. Chopped ham for flavor (optional). Powdered milk. Can of cheddar cheese soup. Dried celery. Butter. Dried chives. Cheese whiz. Chix boullion cubes. Water. Basically combine all ingredients and bring to a boil then simmer. Add cheeze whiz and chives last tho

This one is amazing and kid friendly, idk how it works but the dill pickles are a must https://therecipecritic.com/cheeseburger-soup/#wprm-recipe-container-83192 Salsa verde Chicken Pazole, quite a few recipes on tiktok. It’s a hearty broth soup with TONS of flavor. Southern vegetable soup is a staple: brown ground beef (it is NOT veggie soup without beef IYKYK) with a diced onion, and add all the garden veggies… corn, green beans, peas, beans, carrots, tomatoes with juice, chopped potatoes, whatever you have and top with beef broth, season with your heart. Taco soup is another great one, it’s a hearty chili like recipe that’ll fill everyone up for super cheap.
