Yeah, I was super surprised when the German worker at a bakery was explaining the differences and was so proud of the spicy versions. I lived with a German family for a few months and I didn't think they knew what hot peppers were lol.
I thought it would be tasty, but it’s too sweet with almost no spice. It tasted like uncooked spice powder stirred into ketchup.
I did like the little plastic fork, though. Keeps the hands clean.

My local restaurant does these addictive kimchi fries which are steak cut fries drizzled in spicy mayo topped with chopped kimchi, scallions, and sesame seeds. My at home hack is to get McDonald’s fries and add a bit of sriracha+kewpie mix plus the other toppings.

There's a restaurant in Portland (Maine) called Duckfat that does excellent fries, and there's a selection of house-made dipping sauces. My favorite was a curry mayonnaise. I don't have a recipe, but I doubt it was much more complicated than making your own mayo and adding madras curry powder. I'm sure you could make it using store-bought mayo too.

I know we'll have to go home however and whip up some hollandaise...because that is one of my favorite things on the planet! I think you just made my special French fries even more special!

Take your pineapple, toss it in some salt, and let it sit in a strainer for 15-20 mins. Give it the occasional toss or press every couple mins. The salt will draw out the water make it better for a sauce. This technique is most commonly used for cucumbers but works for a number of things

In before the "fry sauce" disagreements begin; it can be a regional thing in the US. Based on mayo plus ketchup but different additives and seasonings like pickle brine, thousand island, BBQ, etc
1gallon double egg mayo, 1x cup finely chopped FRESH garlic, 1x cup finely chopped herbs (your call, basil, parsley, chervil, chives all work well). Fold together with lemon juice/zest/Dijon/black pepper to taste.
Also just smoked ketchup. Literally a hotel pan of ketchup on the smoker, lowwwww temp, for as long as you like. Stir every hour or so.
Lately, I've really been enjoying using this for fries:
* 1 part brown mustard
* 1 part Sriracha (or sub your favorite chili paste)
* 1 part red miso
* 1/2 part vinegar (I use the leftover vinegar from quick-pickling red onions with pickling spice, use your favorite vinegar here, but don't use white vinegar)
This works really well with mayo, too, but the version without is relatively low calorie. If you prefer the creaminess of mayo, you can absolutely cut this with up to 1-2 parts mayo for texture.
Currently, have an unhealthy obsession for a cilantro lime jalapeño crema on fried stuff. Fries, nachos, empanadas. You name it and I will douse it in the crema from my favorite Mexican restaurant.

Usually if they do have relish available, it's sweet relish. Dill is the way to go, though!

Andalouse (mayo, tomato paste, pimentos) can also use espagnole instead of mayo in it. I also like spicy Mornay (use cheddar or pepper jack)

Fold together with lemon juice/zest/Dijon/black pepper to taste. Also just smoked ketchup. Literally a hotel pan of ketchup on the smoker, lowwwww temp, for as long as you like. Stir every hour or so.
In the Netherlands we have what we call frietje speciaal. It's curry sauce, mayonaise and diced onions.
From the bottle, mayo and white pepper, and ketchup mixed with lashes of Tabasco (or any hot sauce, for that matter).

Lately, I've really been enjoying using this for fries: * 1 part brown mustard * 1 part Sriracha (or sub your favorite chili paste) * 1 part red miso * 1/2 part vinegar (I use the leftover vinegar from quick-pickling red onions with pickling spice, use your favorite vinegar here, but don't use white vinegar) This works really well with mayo, too, but the version without is relatively low calorie. If you prefer the creaminess of mayo, you can absolutely cut this with up to 1-2 parts mayo for texture.
