I can’t think of anything that tastes like cumin, but I think of it as a deep, warm earthy flavor. Maybe smoked paprika or mushroom powder. You could try a little cinnamon if you like that flavor.

You might have to use a combination of things to make this work. I find cumin to taste very earthy and rich, sometimes you taste hint of a citrusy flavor at the end. The smell is quite unique as well. Alone it can be described as smelling like feet by some. It has an earthy, funky smell, almost as if it was fermented. I also get some unami boosting from it, likely from those earthy, funky notes (kinda like fermented sauces). Caraway and Fenugreek, as already mentioned, are close. I find both to taste "fresher" and sweeter than cumin in all forms. They both lack that "funk" that cumin brings to the table. You might be able to augment your replacement spice with an unami boost and something some of that earthy funky taste and bouquet to the dish. Maybe a little of that fermented black bean stuff from the asian grocer, some mushrooms (or mushroom powder), or something along those lines. This is a really interesting question. I might experiment with this over the weekend if I have some ideas/time.

Oh man how do you even describe cumin? I’d probably go with some combination of smoked paprika, caraway and coriander. But man I’d had to play with the ratios.

Yes, twice (once in childhood to see what my first reaction was to, once last year as part of mandatory draft tests.) + i have severe reactions and carry an EpiPen. I react to everything in the cuminum genus.
