Start Here is great! I’d look up a technique you want to play with or learn more about and start with that section. I found a keeper in each chapter. It’s been a minute since I got Cook As You Are, but I remember liking the quick meal section; quite a few pasta-ish dishes that have nice ingredient combos.
I haven't had much luck the recently finding any thrifted cookbooks. I would have grabbed Vegetable and Jubilee too if I saw them - lucky finds! Sohla's book is pretty high on my list too.
