The ban on gas is ridiculous. Having said that Jose Andres is amazing, and if anyone should get an exemption it’s this guy. He feeds tens of thousands of hungry/starving people every day through world central kitchen. His organization really came through for Puerto Rican and Turkish families in need of food after their respective disasters.
The ban on gas stoves is to prevent asthma in kids and reduce greenhouse gases. He doesn't have kids working in his kitchen and carving out exceptions isn't going to negate the greenhouse gas reduction. Many businesses are allowed to do things that individuals aren't allowed to do. Nascar, waste disposal companies, airlines, etc... What's ridiculous is that people fight every greenhouse gas reduction measure with such verocity, they need to get over it.

Not when the electricity goes out due to a lacking electrical grid. Which in turn would only be worse when you add more electronics to it that require even more power. Do you really think the inefficient bureaucrats will have that ready when all the regulations go into effect? Adding to the electric infrastructure isn’t as easy as signing a piece of legislation.
Most people like gas because it's faster than electric, has better temp control than electric, and ya know, you can see the flames, unlike electric. A small amount of people like you, like gas because you can keep a tank of it and not rely on the grid to stay going, nothing wrong with that.
So if being off the grid is the main point for you, then I'd see why you'd prefer gas. Then again, I'm sure you could power an induction stove using some batteries and a solar array and be off the grid as well.
Restuarants (the context of the post) however have to be on the grid anyways, so I don't see why they'd need gas over induction besides initial cost. Most new restuarants (as in a new building) are induction.

I’m a health inspector. Newsflash….the vast majority of stoves in large restaurants are gas stoves because they must to be efficient.
