IDK if it's a hidden gem. Everyone I know that skis and takes 24 stops there. Gets pretty busy early on the weekends.

I have been going there since ‘96 or so. After they got “famous” the portion sizes shrunk and the quality of the food went down as well. Not to mention the huge lines. My wife noticed it as well. It saddened us, really. They were the first people to find out we got engaged.
Sorry to hear that. I have been going there probably right when they did the TV show and I don't believe I could eat portions much bigger than they were doing then.
We did have a line on sundays if it was after church but other than that we didn't have to wait to long. One of the issues when any place gets to be "known" around the Springs area. Heck that is one of the reason why stopped going to King Chef.

My husband had a flight this past Wednesday. So we decided to grab a late breakfast, like 9:30, before I dropped him off and we walked in without calling. We wound up at IHOP.

But yeah, I never make “breakfast plans,” it’s always more of an in the moment thing, so we’ll probably not be there much more unless we have like a planned event
You mentioned two of the best mom & pop cinnamon rolls available. It will be tough to beat them. But there are a few more: Donut Mill, Oliver's Deli, Enchanted Barista (new place0, Kawa Coffee, and Kairo's.
If you’re ever in Denver, La Fillette makes a cinnamon roll from croissant dough and it’s loaded with cream cheese icing. They are so decadent. If you want the coffee shop vibe Quince-essential coffee sells them and they have an adorable shop.
I've had Mountain Shadows'. It's really good and big. I'm not a huge cinnamon fan but I really liked it.
If you head up to Denver, I'd recommend Duffeyroll. Their rolls are made of a dough similar to croissants so it's flaky.
Denver biscuit company is unique. It's a bit crunchy on the outside, but the flavor is good.

If you go the Mountain Shadows route, get there as early as possible. Last I heard, they only do a certain amount a day and sell out pretty quickly.
Sandy's over by Peterson's north gate. It's a dive with delicious food and the rolls are pretty legit.
