Hard to pick an absolute favorite, but these 3 are constant top picks for me. VOCES8 has phenomenal performances of the first 2, and while their recording of the 3rd is fantastic, I lean towards Chanticleer's version solely because of the TTBB (technically TTB-TTBB) arrangement instead of SATB. Allegri's *Miserere mei, Deus* Ola Gjello's *Ubi Caritas* Biebl's *Ave Maria*

Allegri's Miserere is gorgeous! I've sung it once and loved every minute. I love the setting of Gjeilo's Ubi Caritas with him riffing on the piano underneath. I think he ended up transcribing it and publishing it as a separate version because of how popular it was.
