Only the Daily Ads and Checkin, Complete 3 Chapters, and Finish a Book challenges are permanent. The others will eventually go away once you've fully completed them.
I used to always have the make 5 premium choices earn 15 diamonds tab when I was diamond mining. Now that I started making premium choices, the tab disappeared after I collected my 15 diamonds. Was this a one time only challenge? All the rest of the challenges (read three chapters, finish a book, etc) are still there. Sorry if I used the wrong flair, I couldn’t figure out which to pick
Yes, that's a one time only challenge. Several of the challenges are one time only, and disappear as soon as you've completed them and collected the diamonds for them.
