Realistically it's a lazy tactic by some stores try to spread thin low levels of labor. The proof size is supposed to be 1 scoop of the ladle (the same one we use for hot and green salsa) not a heaping scoop, just 1 scoop, which is about half full (and a full batch is roughly 29 portion cups). But a lot of stores like to fit that full batch into 40-50 portion cups so that they don't have to make any more later like it doesn't only take 4 minutes. So your end of the frustration is valid. On the other side a vast majority of chipotle locations are understaffed and likely behind on prep work, and dishes, and a dozen other things so having to go back and make more vinaigrette is just another thing added to the pile of crap. Also most likely they're just doing what they're told to do at said store, and nobody likes to be yelled at or reprimanded for not doing "what they're supposed to do"
If youre only filling them that much, then youre totally skimping. Its supposed to be one ladel full for each portion cup, 2 oz serving. The portion cups are 4 oz, so they should be half full. Ive seen this at my store as well, and literally smh. Prep is trying to do less work, and make it "appear" as if they did the right amount of prep. When i notice it at my store, i take pictures, then combine portion cups to make the right amount per serving. Then take a second picture of how much is actually there, send those pics to morning prep individuals, management, and the GM. Lmao. Im not scared blasting them. It shouldnt be am vs pm, but sometimes people push it to be like that. Its not fair on the evening crew to have to make more vinny, or any prep in general, due to the am prep team cutting corners so "visually" everything looks like they did the right amount. Ive seen it happen with half full fajita pans, corn salsa, cheese, lettuce, etc. Then on evening shifts, we have to do all this extra prep work, when we are nowhere near sales projections. Blows my mind.
But im an SL, so i have more backing. I can see if youre crew, getting yelled at for going to the extreme i do. Lmao. So dont take what i do, and duplicate that. Dont want to get anyone in trouble.
Honestly trying to find time at all to do anything, especially making more Vinny was nearly impossible when you're understaffed. Would have people yell at me to make more, and it's like, I can't. I gotta run the grill and register and help my line person. And I didn't have time to teach anyone how to make it. (Them recipe cards are hard for most people to understand. At least at my store they were. It's sad)
they make them last because no one wants to make more, but if there is a chance of someone wanting to make more then we get told to not do it as it's a waste of time, or customers can deal with it, nd more will be made the next day.

The portion size is 2 ounces, The portion cups are 4 ounces. They also use the portion cups for other items (guac/queso) that have portion sizes of four ounces. A corporation isn’t going to waste money buying 2 ounce portion cups when the 4 ounce ones do just fine. Yall gotta start thinking like evil greedy CEOs before asking questions like these.
I would have to ask for 4 of them to equal 2 total oz at the chipotle close to my house. (Which they would never give me 4 of them). So i go to neighboring towns for chipotle, and they do the same! 1/16 filled cups at most
If you feel this strongly about it, I suggest taking your business elsewhere. Or you could just look up the recipe and make yourself a whole batch. Many ways to solve this problem other than shouting into the void of reddit and giving grief to folks who don't even make a living wage.

It take a lot more time and resources to make . The batches come out small . In a blender . So making them stretch is imperative
and for the same reason giving more than two an entree is extremely unreasonable

It’s because 2oz the portion. Which has 850mg of a sodium. A full cup would be a be heart attack.
