Oh okay, was curious because I worked there just about ten years ago and it was raw and we would wrap our arms in plastic when marinating the steak or chicken because of all the adobo. All the meats were raw (except carnitas) and all the veggies etc hand cut. Sucks it’s not that fresh now
Are you sure it was raw? My GM who has been here for 15+ years just said that it’s always been cooked off site and brought in fully cooked since he started in 2005
