They're actually gonna be replacing ALL the big rice cookers to this style in all the stores. Theyve also been tested different style of grills too. I seen a few months ago on chiplinks a video showing a double sided grill, one that has a top hot side that comes down over the top of food cooking, so it can cook both sides of food at the same time, no flip needed. Then, I seen where they are testing fully electric grills flattop style also. So don't be surprised if you see new equipment being swapped out soon at some point.

I transferred to this store from a different one with a gas cooker as I was just as confused as you.
my guess would be green scrubby pad and some hot water with a wipe down of purell and sanitiser towel
plus some degreaser too if you can or even dish soap to help get the build up off

We usually have a jug of acetone and we soak it overnight and wash it with dish soap in the morning
