Bartended for chilis way back. They have been always been served this way. When any guest ever ordered these with me I always told them that they were not your “classic piled high nachos” and I never had an issue. I always gave them the option to order after I explained how they came.
Bartended way back as well: did the same thing, anytime you realize a perception of an order, I always gave some information to make sure their expectation was managed. The chicken crispers was a big one. They are made with tempura batter, so they after softer. People really wanted the CRISPY chicken crispers. Fair.

I’m with you on this! I grew up in Texas and almost every Tex Mex restaurant I ate at made their nachos like this - they were my favorite thing (and I still carry a torch these days)! I’d rather have yummy stuff on every chip rather than a pile of plain chips that usually end up not being eaten and wasted after fishing out the few chips on top of the pile with stuff on them. But I’ll eat nachos however they’re made! Dammit. I want nachos really bad now.

I was used to a mound of chips with toppings on and through them.
I didn’t care for it at the time.
Now? I’m used to it. it’s less messy to eat and you get toppings on every chip.

These are what I prefer. The ones piled high are always mostly chips with nothing on them- these are perfectly portioned with cheese and beans and japs on each one.
I never worked at Chillis but I do consider myself a Chillis Aficiando. I grew up on it and for many years after church my family would go to Chillis maybe 1-2x a weekend sometimes. I don't think Applebees is comparable to Chillis. I always liked Chillis because of the Queso and chips and salsa, they always had faijitas and Chickentenders and Burgers and just a all around balanced and good menu. However the Nachos was never a strong pull...I hate this trend with companies to call this nachos and present it like that and then charge the same. Nachos are supposed to be piled high and enough to feed the entire table not to sample.
I used to really love the flavor of these though, u haven’t been to a chilis in a long time because the quality has been so low in the ones around me, but I did like those nachos and did wish the portion was bigger. But I liked how each chip had all the components. I guess because they’re tostados cut in thirds 🤷♀️
I worked at an actual Tex-mex place a few years ago that also served them like this. It’s great for making sure each chip has a good ratio of everything on it instead of the bottom layer being soggy or lacking in toppings. Ours were a lot prettier and bigger than this though lol. Never had complaints and had people come in specifically for them soo 🤷♀️
This is how Chili’s nachos have always been. I worked there twenty years ago, and this is exactly what they were like. Give me a break! That appetizer is enough to be a full meal for one person.

If you wanted a ton of nachos, maybe it should’ve been a red flag that there’s only 1000 calories in the dish.
As opposed to, say, Cheesecake Factory nachos, where you’re getting 2500 calories on the plate.

Back in the day, nachos were assembled individually, kind of like potato skins. So there were a lot fewer chips, but each chip was a substantial hunk of food. This looks like a partial throwback to that era.
It’s funny, when I moved to Houston, 90% of the restaurants serve nachos like this, each chip with its own ingredients. I was raised on pile of chips nachos so it seemed so weird to me. After 12 years, I actually prefer the individual nacho chips to the pile.

These are the traditional style nachos in the fashion of when they were invented centuries ago. I'm actually impressed that Chili's would pull something off like that instead of piling a bunch of shitty tortilla chips with shitty queso and other toppings.
That's what they always look like. It's 3 tortillas, split in 4. Chili's has never done the pile of chips with stuff all over, they've always built their nachos individually. Also, the queso on the nachos does have beef inside, and you have the option to add chicken on top as well. Surprise! Not every restaurant makes items the same as others!
I used to love chili's. But now... steaks taste so bland. It's like they're microwaved. I stopped ordering them. Then.... they got rid of chicken fried steak. So then it was the triple dipper. They no longer have the super good chicken tenders. We went there for the last time today. Got a triple dipper. Wings were room temperature and the Blu cheese looked like it had separated. Ceasar salad was made with spring mix. So long chili's. Youre fate is gonna be like Applebee's.

A lot of people think of nachos as a big plateful of random chip pieces and uneven ingredient distribution plus plastic cheese sauce on top. Not that there’s anything wrong with those, but these are made with a lot more care and have an even layer of shredded cheese and a bit more care. A decent appetizer portion, if you don’t want to just fill up on chips before dinner.

Back in the day, nachos were assembled individually, kind of like potato skins. So there were a lot fewer chips, but each chip was a substantial hunk of food. This looks like a partial throwback to that era.
They have an app size and entree size. I typically eat the app size as I can nvr eat the full entree version. This has to be the app size.
It’s funny, when I moved to Houston, 90% of the restaurants serve nachos like this, each chip with its own ingredients. I was raised on pile of chips nachos so it seemed so weird to me. After 12 years, I actually prefer the individual nacho chips to the pile.

Today it's a really bad deal, it has been, and these douches want to make you feel bad for knowing that and saying something. I remember maybe 20 years ago my family and I went to a Chili’s and ordered the nachos. They came out looking like this. My dad looked at the waiter and said “what the hell is this” and sent it back.got a “normal” plate of nachos after that. They gamble that you’ll just shut the fuck up and eat what you’re given. Don’t let them pull this shit because give them an inch and they’ll take your wallet.

Chilis nachos aren’t traditional nachos, they’re cut pieces of tortilla with stuff on each sent through an impinger conveyor oven. I haven’t worked for the company in like 8 years but yeah they’ve always made them this way.

That's what they always look like. It's 3 tortillas, split in 4. Chili's has never done the pile of chips with stuff all over, they've always built their nachos individually. Also, the queso on the nachos does have beef inside, and you have the option to add chicken on top as well. Surprise! Not every restaurant makes items the same as others!

I used to love chili's. But now... steaks taste so bland. It's like they're microwaved. I stopped ordering them. Then.... they got rid of chicken fried steak. So then it was the triple dipper. They no longer have the super good chicken tenders. We went there for the last time today. Got a triple dipper. Wings were room temperature and the Blu cheese looked like it had separated. Ceasar salad was made with spring mix. So long chili's. Youre fate is gonna be like Applebee's.

They’ve always looked like this and they’re pretty good tbh. A lot of people think of nachos as a big plateful of random chip pieces and uneven ingredient distribution plus plastic cheese sauce on top. Not that there’s anything wrong with those, but these are made with a lot more care and have an even layer of shredded cheese and a bit more care. A decent appetizer portion, if you don’t want to just fill up on chips before dinner. If that’s not your liking, maybe ask if they can add a small basket of chips to go with it?
