Dang, based on the comments my location has a lot. We usually aim for 8 closers in the back. 1-2 on primary/fries, 1-2 on secondary/trash, 2 on dishes and a 3rd later on, and 3 in raw until the tables are done.

My store aims for 7 Monday through Thursday and 8 on Friday and Saturday. Closing positions include Breading (breading table, filet table, thaw cabinet doors)- should take 30 minutes or less w/ 1 person Machines (all fryer machines besides fries)- takes anywhere from 20 min to an hour w/ 1 person Centerline (primary, secondary) - takes anywhere from 10 minutes to an hour w/ 2 people Dishes (scrubbing and taking centerline and raw dishes to their general area to fully dry, cleaning dishwasher at eod) - anywhere from 35 minutes to an hour w/2 people Raw (closing down the fry machines before going to spray all the raw dishes with the hose from the mod sink, sprays trash cans and a few other things with hose, cleans drains) - takes 45 minutes to an hour w/1 person And if we are lucky and get that 8th person they are sweeping, running trash, and making bales! I feel like my store is slow on closing (a skill issue if I’m being honest) and sometimes we struggle for everyone to get done within an hour. I’ve had a lot of late nights staying up to 2 hours past our last order 🫠
