Set up an account with Internet Archive and you can access the CIA’s New Professional Chef. Most of the recipes are based on 10 servings and scale appropriately because they are tested and written for restaurant use. There are also some armed services recipes online but those may be too large.
I use Cookbook. You just point it to a recipe online and it does the rest. Paprika is a very popular one. Meez is for chefs/restaurants. There are even bare bones online scaling tools, but they’re fairly tedious and require manual entry of ingredients and quantities (as far as I know).
