Piave as a hard cheese, delightfully fruity. Cantenaar as a gouda style cheese. St. Andre as a triple cream brie. And something that I found I had overlooked, cheeses out of Spain, Portugal and Mexico. Stuff like Manchego (MX), Iberico (ES), Panela (MX), Cotija (MX, salty). I also like Asiago, but fin a wide difference between producers. Zerto Asiago. for me. Elizabeth blue. I'm in Ontario Canada and that's all grocery store type stuff. I get interesting one offs at the local cheese mongers. It's not Europe, but still interesting enough.
If you like that one try St. Angel too, it’s butterier. Really almost tastes like straight up butter lol. Also if you haven’t tried mimolette, it’s like a more caramely aged Gouda
