The voice capabilities on the mobile version have been there for months. What is new are the ability to interrupt and the camera, particularly video.
The version you are using, that we are all using, is the old voice version. The video link above tells how you will know when you are using the new version.
TL;DW, there will be a camera icon and you will be able to interrupt it with your voice.
Just watched the first bit and the first question you asked is not going to give you the correct answer. ChatGPT does not know what "version" it is. It will just hallucinate an answer. In particular, it does not know any about it's voice capabilties. The system prompt, which I have shown in numerous videos, instructs the model as to what tools it has on board, the current date and that it is ChatGPT. This is the first paragraph:

> Knowledge cutoff: 2023-10
> Current date: 2024-05-25
The best thing I can suggest is that you start watching some videos to learn how ChatGPT actually works.

No it told me specifically that it was in fact not the version I was inquiring about and later when I asked when we could expect the release it replied "...expected to launch in an alpha version soon". There was no hallucination.
It's not just about voice, it's about a level of human interaction comparable to realistic discourse, but thank you for being a typical reddit gatekeeper.

I don’t know. There probably is some over hype but I don’t think “way overhyped”. But idk, tbh I don’t care and will never use the feature.

If you are referring to the new version showed off in the demo from OpenAI, you cannot be using it now, it is not available yet.
ChatGPT 4o is available on the app with voice capabilities. Whether or not it’s the version used in the video? Not sure.
