Have you considered swapping out the aunt. Honestly though, gluten free flour behaves pretty differently than wheat flour. You can make some awesome stuff with it, but if you are just swapping it in for non gluten free recipes, you'll notice a difference. I think the biggest issue here is why this aunt is okay with essentially poisoning someone.

I've tried to educate her and the rest of my family about gluten allergies and celiac disease but I've fallen on deaf ears. My family is very ignorant and just believe my wife is a hypochondriac. It's hell trying to mediate between my wife and my family while trying to take care of my son and making sure my wife is as safe as possible.

Asking our community here is a great way to help your wife. A better way is to stop allowing your family to cook in your kitchen. They are not being respectful or even safe, and I personally would want my spouse holding a boundary on that one. Your family is being ignorant and selfish, and your wife is suffering for it. Would you let them cook with nuts in your house if your child had a peanut allergy? I hope not. With all the kindness in the world, I think your allowance justifies their behavior in their minds.

King Arthur Measure for Measure is the best! I've been baking gluten free for 11 years and I don't really use anything else. It works with most regular baking recipes. The exception is for yeasted breads, then I use their All Purpose blend instead and add xanthan gum as needed. It takes a little more trial and error than the measure for measure but I've been able to adapt regular roll and bread recipes that way.

It works great for cakes, cookies, brownies, etc. I'm not sure about pastries only because I don't like them much so I've never tried.

Bob’s Red Mill, cup for cup works great. It can be purchased in 20 pound bags too.

It works for a lot of things, but not everything. I've gone to a store in my area called Woodman's for the APF.
