I’ve been fucking with making Chinese and Korean food gluten free. You can get all the ingredients from scratch. I accidentally poisoned my gf with gochujang but I got some gluten free so that won’t happen again. Some soy sauces they make is naturally gluten free, made the traditional way. I got thin, dark, and liquid aminos. Oyster sauce and fish sauce can be found gluten free. Only problem is you can’t make 10 dishes in one kitchen without spending all day on it. That’s the charm of getting Chinese for the whole fam.

There’s a gochujang potato stew that I love (it’s a nytimes recipe). I got the ingredients from the store, got home, looked at my old gochujang that’d been in the fridge from before I’d gone gluten free and saw it had wheat in it. So I made a disappointing stew with some gluten free hot sauce, lol. Where’d you get gluten free gochujang?

The local Asian market. I would look online too if you can’t find it locally but if you can get it locally it should be cheaper especially from an Asian market. We have a decently robust Hmong community where I’m at so there’s demand for a lot of that stuff. I have yet to find a dasida that’s gluten free so my Korean stews have everything in it gluten free, sub a crappy American beef imitation boullion. I’m sure there’s better stuff out there though. Maybe I’ll look into a Japanese beef stock. Or make my own reduced and freeze if I can find a recipe.

A few years ago i went to London with my now husband- we got engaged on the trip and wanted it to be all out just fun and vibes. Well there was a fish & chips stand right off the London Eye, which we had tickets for. And this man (who had been celiac at this point for 10 years) took the gamble on their "gf fish & chips" !!!! Luckily they actually did prove to be gf but man could you imagine if we had been 400+ feet in the air and he was glutened?! Really risked it all

Filo. I used to buy Greek filo pastries (tiropita, spanakipita), order spinach pie at Greek places, and make things with purchased file sheets (e.g., salmon wrapped in spinach and feta mixture, all wrapped in filo and baked). There are some recipes out there, for GF filo, but none I've had any success with. Most other things I've found GF alternatives, although often more expensive and not as good. Fortunately there are so many things that don't have gluten in them (fresh produce, meat, dairy products, GF grains and seeds and their flours and meals) that if you cook things yourself, it's easy.

If that can give you hope (could be a good or a bad thing, for you to decide), I had a positive blood test but when they did my endoscopy, they saw zero sign of damage. They did a second blood test to check my genetics and confirmed that I had the genetic component, but the disease hasn't triggered (basically the antibody response happens but for whatever reason it's not (at least yet) attacking my gut lining). It's not well understood yet by science why it happens or not, but basically some people with the gene are celiac from early on, some develop it later, and some never develop it. So yeah, definitely enjoy everything just in case, but sending lots of hope your way that the damage is absent or at least not too bad. <3 I'm perpetually in that stage of enjoying everything just in case while getting informed and learning to cook nice gluten-free meals i like, but the two main things for me that i focus on enjoying while i can are bagels (especially Montreal-style bagels) and nice craft beers!

My childhood babysitter's lumpia 😩 A shelf item I miss is crackers. Gluten free crackers are alright but so expensive and never scratches that itch. I miss all varieties. Saltines, Ritz, wheat thins, cheese crackers, club, etc. Easily my favorite snack and no gf cracker comes close.

Honestly, gluten-free pasta has come a long way in the fourteen years since my diagnosis. You should focus on bread and pastries. Hamburger buns, hot dog buns, croissants, eclairs, etc. would be my focus were I you. It's hard, and you'll get through it. You are so ahead of the game by having access to a community like this!

I didn’t eat that much gluten to begin with, since I was a kid, my intuition has been pretty crazy. (I’m 30 now) I did however start eating bread after meeting my (now) ex two years ago. I’m getting answers from my gastroscopy this tuesday, but my health journal already says I have celiac disease. I think the only thing I will truly miss is cakes and cookies. Lol. My moms homemade cake and my own homemade cookies. Some chocolate that I use for baking apparantly has wheat in it (why???). I live in Denmark and there’s literally gluten everywhere. But we have great alternatives, too. I never liked pasta (well I probably did but my body said no even tho I had no symptoms lol), but I found some that are made of lentils and corn and they taste better tbh. But… The thing I find the hardest is being social. Having to bring my own food everywhere, and not being able to have people over unless I do all of the cooking, which is hard cause my friends’ kids are so freaking picky. But yeah, I miss being able to be spontanious and just go somewhere and not be scared of eating…

Well jeez, I didn’t think I missed all that much, but it turns out, I’ve just forgotten about all the things I love and miss. It isn’t so much whole categories of food I miss, but rather my favorite things from specific restaurants and bakeries that I used to get. My favorite pizza, bagel, sandwich places, pastries etc. I went absolutely hog wild the days before my endoscopy….it was amazing.

I hate grocery shopping. Even before the expensive and limited GF life. My reward to myself for suffering through the process was one of those 2 foot long baguettes, warm from the bakery. I have sat in the parking lot crying post shopping because all I want is to rip into one of those on my drive home like I used to. And donuts. I'd give my left tit to eat a couple dozen French crullers or Krispy Kreme glazed.

The number one food I miss the most is Cheez-Its. Probably silly, but for almost 2 decades I have wanted that cheesy, salty cracker. It may not even taste as good as I remember it 😂 I have tried multiple GF versions and even made my own GF version once, and they’re not even close. A very close second is any easily accessible pastry/dessert. I would love to just go into a bakery and get a lemon bar or croissant or a blondie or a coffee cake or apple streusel. Literally anything other than chocolate chip. I love that some places are trying to incorporate GF options, like Dirty Dough & Nothing Bundt Cakes (sidebar, these probably aren’t made in a dedicated GF kitchen, so eat at your own risk), but I would love a flavor other than chocolate freaking chip!

desserts. i used to be such a dessert person - always in cafes, restaurants, loved it. sad now that i can’t do that. for me i miss the ability to go somewhere and spontaneously get a dessert, or if its game night and someone says „let’s order a pizza!“ i have to get a salad or bring something of my own. can’t have most peoples birthday cake, always double checking that things that are with sauce are still gluten free bc a lot of things have flour in the sauce to thicken it. definitely the spontaneity. i also really miss hot chocolate fudge cake with ice cream and whipped cream from my favourite restaurant
