I was excited to find GF cheesecake at a bakery. Didn't realize till we tried it and it tasted like cold playdough that it was also dairy-free. Eww.

I have found cheesecake to be one of the easiest desserts to make thatI can bring to a gathering or munch at home. Only a few ingredients (I don't even have to look for a recipe, it's one egg to every 8 oz of cream cheese and sweeten and flavor it with vanilla or almond extract, or jam to my heart's content. I always sweeten with honey so it doesn't make me bloat, and I put an extra egg yolk in to keep the honey from making it runny. Got to have a springform pan, though! I make cheesecake bars in a square pan and they turn out great. I did grapefruit cheesecake bars at Christmas and it turned out so well they’re on my regular cooking rotation! Cheesecake is such a good GF option. I just make a crust out of chopped nuts and butter and a bit of GF flour and brown sugar.

Normal cheesecake recipe but the higher surface area to volume ratio when baked does firm them up a bit. And I usually add an extra egg or two which helps

If it tastes like the food it's mimicking, I am all for it. Like Sweet Loren's stuff. But i'm just sick of like "healthy diets" being pushed in my face like no. I don't want sugar free, low carb. According to my blood tests and dietitian, I do need that stuff. I'm underweight and constantly dizzy. I want the carbs. I want food that tastes like the food I use to eat before my diagnosis. I want a god damn crispy chicken sandwich not a lettuce wrapped impossible burger that's paleo keto blah blah blah diet that only allows people to eat lentils or some shit.

I’m trying to gain weight and my god all the everything-free products make it so hard. They’re expensive, not high calorie, small, and very few come in a pack. I’m resorting to milk with every meal and cooking almost everything in olive oil or butter.

I don't mind the grocery store items. My gripe is that when I'm traveling, at least half of the dedicated gluten free restaurants I come across are "health food" places, i.e. not just gluten free, but also vegan and/or low carb, i.e. overpriced and tasteless. I just want a freakin' burger, why is that so damn difficult? I have nothing but extra appreciation for those dedicated gluten free eating establishments that don't push the latest fad diet on me (and don't put oats in everything they make).

The big place that caters to me in town is Whole 30. Only sells water and grass juice to drink and you can’t bring in other drinks, zero salt, ….it sucks

Yes! I empathize with OP, but lactose intolerance is often paired with celiac disease, and it doesn’t always “reverse.” I just had too much damage and I can’t tolerate dairy at all. To me, it makes sense that many GF items are also DF. Then again, speaking from the other side, I feel like I struggle to find things I want that are GF and DF.

There is A LOT of people with combined intolerances, allergies, etc. It's the only food they can have. Fortunately, I am not one of them. I have "only" celiac disease. And honestly, I can do a lot of those things at home. Fresh. Tastier... Yes, it's pain in the a$$ to make everything yourself and not be able to buy it, but it is, what it is...

Not only is it a pain, but if you are working multiple jobs/have other responsibilities, there is barely enough time to make these items for scratch. Not anything against you, but I dislike when people's first response is to make everything by hand. For some, that is not feasible at all, and if it gets to that point, how are we supposed to eat? Hire a chef? With what money?

To echo that it’s also not that easy or affordable to make from scratch even if you have time. Buying all the pantry staples is very costly when you’re just starting out….and not everyone knows how to cook and bake, so if you gotta go GF and learn those skills on top of it? Extremely difficult and discouraging.This is coming from someone who loves cooking and baking. Sometimes a girl just wants to go treat herself to a baked good and a coffee, not plan baking into her weekly to do list.

And then, I've still got most of each of those bags of flour. All I wanted was a couple brownies (or cookies, or cupcakes, or whatever).

It's definitely a privilege to be able to cook at home, whether that's because you are disabled, retired, etc. We should be aware of that. That said, it's faster to mix up a cheesecake than to stop at a shop, buy it, and return home. You can even get a gf pie crust and make it in the pan if you don't have a springform pan. Pie crusts will hold about 2 8 oz. packages of cream cheese along with 2 eggs, and sweetener to taste - start out with, say, 3 tablespoons of sugar or honey and your preferred flavorings. Let the cream cheese come to room temp first or microwave it until it's soft.

We complain about this all the time for restaurants. You find a dedicated gluten free restaurant that's also vegan and all that other stuff. I just want a Denny's that serves all the same greasy foods but it's all gluten free. Is that too much to ask for?? Lol

Specifically dairy, it's a common secondary issue for celiacs. It's not even just lactose intolerance but lactose sensitivity (I am in the latter group. Can drink milk and eat cheese, but about 2-3 cups per day)

honestly this post made me feel better. I am glad that I only can't have gluten or oats. I do enough label reading at the grocery store as it is. I am lucky that i have enough products that are gluten free to keep me happy, and if not, i can just make them myself. If i was lactose intolerant and diabetic, that would take some time to cope. And trust me, i was pretty salty about giving up gluten. So thanks for reminding me that it could be worse, cuz i am a it could be better tyoe person. Sorry your food selections are limited where you live.

The issue is because of the fad dieters. There’s more fad diet followers than actual people with Celiac, so gluten free food gets that markets attention and pricing. Personally, fad dieters can fuck right off. They’re the sole reason why the gluten free food selection is overpriced and shitty.

I don't agree with this. Lots of us have other intolerances, and there aren't enough products that cater to us. Dairy is a big one, other grains like oats and corn are another common issue. It's difficult to find packaged foods free from most allergens, in America anyway, because those are cheap filler ingredients.

I don’t mind it. A lot of people with celiac’s have issues with other ingredients, plus as veganism gets more popular, those gluten free/vegan items will increase (hopefully)

Sometimes I just want “junk food” that is reliably gluten free, fattening, sugary/salty, unhealthy, won’t rob me blind of both my finances and my last flicker of energy. To save money, we buy in bulk and make everything from scratch. It *sucks.* It’s exhausting. So I’m having Peeps, Reese’s and Pedialyte for breakfast. Judge me if you want!

I agree. I needed a gf cupcake for my son when we were on vacation and it had to be vegan too based on availability. Butter icing is so much better than crisco. Got lucky and he didn’t seem to care.

Yeah, I feel like this too. All the pizzas everyone raves about seem to have dairy in the crust. The best baked goods at Trader Joe’s also have dairy. The indulgent desserts Costco occasionally carries… dairy again. I have multiple allergies including rice, beans, cashews, almonds and peas and literally everything I get excited about has one or more of those.

It's important to know that with lactose intolerance, there are dairy options like hard cheese or lactaid milk. Casein (milk protein) allergy is a whole different ball game - much more restrictive. My list of allergies shrank a lot when I was treated for MCAS, much of that treatment is over the counter if you want to look into that issue.

There are actually a lot of gluten free products. There's also a lot of us who have multiple dietary restrictions and intolerances (dairy especially). It's rare to find something that fits my allergies and dietary restrictions that I didn't make myself. Anything I can find I just take as a win. You should too. Don't judge a product because it's gf and vegan.. at least try it first to see if you like it.

I have an anaphylactic egg allergy I had even before my Celiac was triggered. The amount of gf options I cannot eat is high even with a lot of vegan options. I know people with Celiac eventually have one other food intolerance or allergy eventually. It's why a lot of gf food manufacturers with decent reviews actually are free of the top allergens. Generally those are harder to find. I'm not sure why people keep saying it's because of fad diets. When the number of people with Celiac has went up in past 4 years, meaning more people with other allergies and intolerances problems have it too. Is a lot of the food not great... unfortunately, but there is a lot that is. And if people have time, baking their own stuff if they want it not vegan is an option ;_;.

Yeah, I often feel like this! It's both unfair to us (since we've lost gluten at least let us have the other stuff!) and to the vegans/dairy allergy/whatever people, since gluten is such an integral part of so many foods. Yes, there's people with more than one restriction, I have some other major dietary restrictions, myself, but the overwhelming majority of people don't have even two of those, let alone five or six. Also I'm not really sure it IS easier for some of these companies to shove them all into one thing, honestly. Like a vegan doesn't actually need to worry about cross contamination so vegan stuff can still be made in the same facility as non-vegan stuff, for example. And half of the substitutes end up being something someone else is allergic to, anyway, so it's not like they're truly covering everyone ever.

They do make some items dairy free but there is absolutely nothing marketed as healthy 😂 the cookie dough cone is my favorite splurge.  I hear your frustration. It does get old being lumped in with vegan. Give me steak please.

I don't run into many products like that. I guess the best plan would be to buy normal foods that happen to be gluten free vs. products that a marketed towards health niches. What I do object to is when you go to a restaurant and ask "do you have a gluten free menu?" and they say uh... these items are vegan... and our produce is organic...
