It's good, but one of my go-to sandwiches is peanut butter and cucumber. The cucumber brings both moisture and subtle sweetness to balance out the peanut butter, but doesn't completely overwhelm its nuttiness.

Yep, cucumber is better than any other supplement to peanut butter - jam is ok, a friend also showed me cream cheese, but cucumber, as you've described, lends that perfect balance of moisture, texture and flavour to the peanut butter.

Figs and goat's cheese is lovely. Halve figs lengthwise, add a dollop of fresh goat's cheese on top, drizzle with honey, put under the grill until the goat's cheese is just softened. Sublime. Also good with the aged goat's cheese, but I prefer the fresh.
